  • Wash and clean fresh tilapia thoroughly, and gently make about 2 to 3 cuts on each side of the tilapia.
  • Prepare the oil base seasoning by mixing all the ingredients together in a bowl, and stir gently.
  • Smear the oil base seasoning mixture all over the tilapia, ensuring that the seasoning gets into the cuts made.
  • Wrap the seasoned tilapia in a cling film and marinate in the fridge for about 25 minutes.
  • Preheat the oven at 180 degrees Celsius for about 15 minutes and put the marinated tilapia into the oven. This should be grilled for about 15 minutes.
  • While the tilapia is being grilled, prepare the pepper base seasoning by:
  • Using a food processor, grind red and green scotch bonnets, green pepper, spinach, dill, coriander leaves, ginger, garlic and onion together to form a pepper mix.
  • Into a preheated pan, add some vegetable oil.
  • Then add the seasoning cube and fish seasoning.
  • Add the pepper mix and stir gently.
  • Take out the tilapia from oven and smear the pepper base seasoning on both sides, then place it back into the oven for about 10 minutes.

  • Combine dry ingredients. Sift flour, cocoa, baking powder and baking soda into a large bowl.
  • Add both sugars and salt and whisk to blend well, pressing out any lumps of brown sugar.
  • Combine wet ingredients. Combine eggs, oil, melted butter, vinegar, marula cream flavour and vanilla essence in a bowl and whisk to blend well.
  • Mix wet and dry ingredients.
  • Pour the wet ingredients into the bowl with the dry ingredients and mix with a whisk or an electric hand mixer on medium-low until blended. It will be thick and somewhat dry.
  • Mix in hot coffee. Add the hot coffee gradually in two stages to minimize clumps forming and beat until evenly combined and the batter smooth.
  • Bake. Divide batter evenly between the prepared pans and bake for 30-33 minutes until cakes spring back when pressed gently and a toothpick inserted into the center comes out clean.
  • Transfer pans to a wire rack and let cool for 15 minutes before inverting onto the rack to cool completely.
  • For icing, mix caramel and whipping cream together and leave it in the fridge to set.

Serve and enjoy with any Nigerian swallow of choice, you can even serve over white rice. Some swallow to serve with include;

  • Feel free to add as many leafy greens as you want. You can also add less.

  • Ingredient
  • 600g Egusi (Melon) seeds
  • 2 Cooking spoons red palm oil
  • Beef: Best cut and shaki (cow tripe)
  • Fish: Dry Fish and Stock Fish
  • 3 tbsp Ground crayfish
  • Pepper and Salt (to taste)
  • Vegetable: Nigerian pumpkin leaves, spinach
  • 3 Small stock cubes
  • Ogiri Okpei (traditional locust bean seasoning: optional)

Instructions
 

Before Preparation (Caking Method)

  • Before preparing the soup, soak the dry fish for about half an hour.
  • If you are using the very tough stockfish, boil it for 20 minutes and leave in the pot with the hot water to soak for about an hour.
  • If using the softer stockfish, you can just soak them in cool water till you can break them apart with your hands.
  • When the fish and stockfish are soft, debone and break them into sizeable chunks.
  • Much closer to your cooking time, grind the egusi with a dry mill.
  • Grind the crayfish and the dry pepper separately and set aside.
  • Wash the vegetable to be used. Cut into tiny pieces.
  • Boil the shaki, stock fish and dry fish in 1 litre of water with the stock cubes till they are well done.
  • First sign of a done shaki is that the cuts will start curling on itself.
  • Wash the beef to be used for the soup, add it to the pot and cook on medium heat till done.

Directions

  • This method produces a healthier egusi soup as there is no frying involved. It requires less oil too.
  • In this method, as soon as the shaki, fish and meat are done, remove them from the stock (water used in cooking the meat and fish) and place in a different pot or plate.
  • Add the ground egusi to the stock and stir.
  • If the stock from cooking your meat and fish is not enough to give you a medium consistency, add some water to get the consistency of evaporated milk or a bit thicker. It will not be as smooth as evaporated milk though.
  • Cover and cook till the egusi cakes.
  • Stir and add a little bit more water. watch it closely so that it does not burn.
  • Repeat step 3, adding only a small quantity of water at a time.
  • After about 25 minutes, you will notice the clear egusi oil coming to the surface of the soup.
  • Add the red palm oil and pepper to taste and cook for about 7 minutes.
  • You know it is good to continue when the palm oil and egusi forms a good blend of light yellow colour.
  • Add the cooked meat and fish. If using pumpkin leaves or any other soft vegetable, add it at this time and stir the soup.
  • Add salt to your taste, stir and leave to simmer for 2 minutes maximum. Turn off the heat.
  • Leave to stand for about 5 minutes before serving.

Ingredients
  

  • 300 ml Maas breyani paste
  • Garlic and Ginger
  • Breyani Powder
  • 1 tbsp curry powder
  • Breyani Mix
  • Seasoning of your choice
  • 1 kg cube beef meat

Instructions
 

  • Wash your meat drain the water as much as you possibly can add seasoning and all of the above ingredients.
  • Mix everything and cover with a plastic wrap and keep it in the fridge for about 4/5 hours.
  • Cook four cups of rice once it starts to boil add a tablespoon of turmeric to it and more boiling water be sure not to overcook your rice.
  • Boil 1 1/2 cups of breyani lentils once cooked properly drain out the water and put back on the stove for a few minutes.
  • Until it looks a little dry/ free of water then add the lentils to your cooked rice Mix well together and cover your pot.
  • For your breyani curry chop 1 onion and peppers of your choice add a tablespoon of curry powder followed by 3 Chilli beef cubes and spices of your choice add your marinated meat and breyani mix cloves, cinnamon sticks etc.
  • Let it cook for about 15 minutes and add your cubed potatoes stir and cover your pot.
  • Keep stirring occasionally until everything is properly cooked.
  • And then add your curry to your cooked rice mix well together and cover your pot for 10 minutes.
  • Serve with any salad of your choice and enjoy.
