For The Fish I Used:

  • 1 tsp adobo
  • ½ tsp curry
  • Lemon Juice

For The Sauce, I Used

  • 3-4 pcs red bell pepper/ Tatashe

  • 1 tsp red pepper flakes

Instructions
 

  • Cut the head of the fish and clean properly.
  • To remove excess water, you can use your kitchen towel to dap it out.
  • Add all the listed seasoning together in a bowl, add some lemon juice and oil ( You can also use water).
  • Mix together and spread evenly on both sides of the fish.
  • Transfer to your baking tray and grill for 25-30 minutes @180• ( You can use your air fryer).
  • In another pot, add some water and boil your plantain.
  • Chop some onions and red bell peppers & scotch bonnet, set that aside.
  • In your frying pan, add some oil, your chopped onions and sauté for 3-4 minutes on low heat.
  • Add your chopped peppers and fry for 7-10 minutes on low heat.
  • Add your seasoning and red pepper flakes, add your grilled fish and combine together nicely.
  • Turn off the heat and serve. You can garnish with some spring onions.
  • ENJOY!!!

  • 2 Ibs goat meat, cut into 1-inch cubes
  • 1 cup chopped onions
  • ½ cup palm fruit extract
  • 3 okpei (locust beans), finely chopped
  • 1 cup ponmo (cow skin), chopped
  • 2 cubes crayfish seasoning
  • ¼ yellow and red pepper blend
  • 2 cups stock fish bone
  • ½ cup crayfish, ground
  • 1 cup smoked fish, flaked
  • ½ cup dried fish, chopped
  • 10 scent leaves, chopped
  • Salt and pepper to taste

Instructions
 

  • In a large pot, heat the palm fruit extract over medium heat. Add the chopped onions and sauté for 2-3 minutes until fragrant.
  • Add the cubed goat meat to the pot and brown on all sides, about 5-7 minutes.
  • Stir in the chopped okpei, ponmo, crayfish seasoning cubes, and yellow/red pepper blend. Cook for 2-3 minutes.
  • Pour in the stockfish bone broth and bring the stew to a boil. Reduce heat to low, cover and simmer, until the meat is very tender.
  • Stir in the ground crayfish, flaked smoked fish, chopped dried fish, and chopped scent leaves. Season with salt and pepper to taste.

Chef Donkey: Oh it would definitely be when I was in the UK Master Chef Professional and I made Quail with Chocolate cake – hahaha! I was still learning about texture combinations then. I have since made the dish again and it is now successful as the texture, flavour and aroma are well balanced.

AFN: What kitchen equipment do you use more and can’t do without? 
Chef Belinda: Not to sound cliche but the only thing I can think of is a knife! Any other equipment is just an added luxury.

Chef Donkey:  My favourite food without a question of a doubt is South African food but my favourite dish is my version of UMPHOKOQO. This is my version of a traditional and classic South African dish. It has a bottom layer of home-cultured sour cream. Then a layer of traditional chakalaka and lastly it’s a cape Malay spiced Phutu.

  • 125 g Butter
  • 40 g Icing/powdered sugar
  • 125 g Cornflour
  • 90 g Cake flour
  • ¼ tsp salt

Instructions
 

  • Get a bowl, put in your butter and sugar, whisk till smooth and fluffy.
  • You put your corn flour, cake flour and salt in the same bowl where you have your butter and sugar, mix everything to combine, cover it with a foil wrap and refrigerate for about 30mins.
  • After 30mins you scoop and measure 20g with a scale for each cookie or even more depends on how big you want your cookies.
  • Roll with your hands to smoothen, you can drop it on a flat surface and then press down with a fork.
  • Bake for 40-45mins @170C (Don't forget to flip it over to the other side) and here you have your delicious “crunchy butter cookies”.

We all know we should drink loads of water, we hear about it every day. But really, why? What’s the main reason behind doctors and specialists telling us to always drink water?

Did you know water makes up 90 percent of brain weight? It also makes up 60 percent of your body weight. Adequate hydration is essential for your body to function. Your body uses water in all its cells, organs, and tissues to help regulate its temperature and maintain other bodily functions.

How Much Water Should I Drink

Because your body loses water through breathing, sweating, and digestion, it’s important to rehydrate by drinking fluids and eating foods that contain water. The amount of water you need depends on a variety of factors, including the climate you live in, how physically active you are, and whether you’re experiencing an illness or have any other health problems.

Most people who are in good physical health get enough fluids by drinking water and other beverages when they’re thirsty, and also by drinking a beverage with each of their meals, according to the Centers for Disease Control and Prevention.

If you’re not sure about your hydration level, look at your urine. If it’s clear, you’re in good shape. If it’s dark, you’re probably dehydrated.

What Happens if You Drink Too Much Water?

As with most things in life, too much of a thing is bad. You can actually drink too much water, and this can be detrimental. Drinking way too much water too quickly leads to a condition called Overhydration, hyponatremia or ‘water intoxication.’ When that happens, the sodium levels in your blood drop way too fast and will make you sick. This is a medical emergency and can be fatal.

  • Blend all peppers in a food processor for a chunky texture
  • Sauté some chopped and locust beans in your bleached palm oil for 3 minutes
  • Pour in your pepper mix. Combine together and leave to fry for about 10/15 minutes depending on your heat
  • Stir and add your seasoning, protein, meat stock and don’t forget your crayfish add little water to loosen it up a bit (if needed) Stir together and cover to cook for 5 minutes.
  • When your oil starts to float, you know your Ayamase sauce is ready.
  • I served mine with rice and beans.

Ingredients
  

  • 2 cup washed bitter leaves
  • ½ cup  sliced Scent leaves
  • 2 cup sliced uziza leaves
  • 300 g roasted fish
  • 1 kg assorted meat
  • ½ cup ground crayfish
  • Ground Pepper to taste
  • 2 seasoning cubes
  • 7 pieces of stockfish
  • 4 cups palm fruit sauce
  • Salt to taste

Instructions
 

  • Grind all the leaves together, these ground leaves act as the soup thickener and also gives it the black-looking color, hence the name – black soup.
  • You can blend to paste by adding a little water to ease up the movement of the blades.
  • Wash and boil the meat with half a cup of onions, 1 seasoning cube and a pinch of salt. Cook for 30-45 minutes, until the meat becomes soft and easily chewable, you can add a little water to stop it from getting burnt.
  • Add the dry fish (hot-water-washed), stockfish, crayfish, add the banga sauce and allow to cook for up to 15 minutes until the soupy mixture thickens.
  • Add the ground leaves, stir, add 2 seasoning cubes, salt to taste, and allow to simmer for another five minutes and you are done.
  • If you have cow liver included, you can start parboiling it with the rest of the meat but you have to remove it after 20 minutes and add them later when the soup is almost done.
