Creamy Samp

Never cooked samp before and had to order the quick cook version online. The technique of mixing cream of mushroom soup powder with milk to make the sauce creamy was completely new to me, but it worked surprisingly well with the melted mozzarella. Served it alongside grilled pork chops for my family and everyone loved the texture.

Nigerian Fisherman Soup

i managed to get fresh catfish from the fishmonger near the robot by the taxi rank. used exactly 1/2 cup of pounded yam flour mixed with hot water for the lumps. taking the fish out early like you said was crucial so it didnt shred into pieces, soup was so lekker.

Moroccan Chicken Rfissa

I had to run to the Middle Eastern shop on Georgia Ave in Silver Spring to find the whole fenugreek seeds, but c'est magnifique. Soaking them overnight as instructed removed all the harsh bitterness. Marinating the chicken with the sliced onions, turmeric, and ginger overnight gave such a deep flavor to the gravy. Reminded me a bit of soaking up rich sauce at home.

Easy and Simple Way to Make Banku

London cold is no joke o. I left the corn flour mixture by the radiator for four full days before it got that proper sour smell, because two days just was not enough in this weather. But once I started stirring it in the pot for that 20 minutes, it came together so smooth. Paired it with fried tilapia and hot pepper, e sweet sha!

Amasi Recipe

Herh, finding authentic amasi starter in Tottenham was not easy at all oo! I had to go to a South African shop in Wimbledon to get a bit of live culture. Used organic Gold Top milk from Sainsbury's and covered the jar with a coffee filter. Left it 30 hours near the radiator because London weather is cold chale. Worked like a charm in the end.

boiling the pounded cassava leaves for over an hour takes patience sha, but the moment that ground groundnut paste hits the palm oil and leeks, the aroma is something else. e sweet well well, ate mine with boiled plantain.

Edo Black Soup

had to drive past two robots in north end to find a shop with real uziza and bitter leaf! used the full 4 cups of palm fruit sauce and 1kg of beef and shaki. blending the leaves smooth really made it pitch black and so thick, totally lekker with some swallow.
