Ingredients
Oil based seasoning ingredients
- ½ cup vegetable oil
- Seasoning cube and fish seasoning
- 1 tsp white pepper and black pepper powders
- 1 tsp ginger powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp fresh lemon juice
Pepper base seasoning ingredients
- ½ cup ground green scotch bonnets
- ½ cup ground red scotch bonnets
- Green bell pepper
- Red bell pepper
- 2 medium onion
- Spinach
- ⅓ cup dill
- ⅓ coriander leaves
- 1 tbsp ground ginger
- 1 tbsp ground garlic
- ⅔ cup Vegetable oil
Instructions
- Wash and clean fresh tilapia thoroughly, and gently make about 2 to 3 cuts on each side of the tilapia.
- Prepare the oil base seasoning by mixing all the ingredients together in a bowl, and stir gently.
- Smear the oil base seasoning mixture all over the tilapia, ensuring that the seasoning gets into the cuts made.
- Wrap the seasoned tilapia in a cling film and marinate in the fridge for about 25 minutes.
- Preheat the oven at 180 degrees Celsius for about 15 minutes and put the marinated tilapia into the oven. This should be grilled for about 15 minutes.
- While the tilapia is being grilled, prepare the pepper base seasoning by:
- Using a food processor, grind red and green scotch bonnets, green pepper, spinach, dill, coriander leaves, ginger, garlic and onion together to form a pepper mix.
- Into a preheated pan, add some vegetable oil.
- Then add the seasoning cube and fish seasoning.
- Add the pepper mix and stir gently.
- Take out the tilapia from oven and smear the pepper base seasoning on both sides, then place it back into the oven for about 10 minutes.
- Serve and enjoy with any side dish of choice.
