Instructions
 

  • Heat a splash of sesame oil in a large pan over medium heat.
  • Add chicken pieces and cook until no longer pink.
  • Add sliced onion, carrots, bell peppers, and cabbage to the pan.
  • Stir-fry until vegetables start to soften.
  • Add 1/2 tsp Sazon seasoning, 1/2 tsp all-purpose seasoning, 1/2 tsp curry powder, and seasoning cubes to taste.

  • ½ stick celery
  • ½ red bell pepper
  • 2 cloves garlic
  • ½ cup rice
  • 1 small tomato
  • 1 tbsp tomato paste
  • Sunflower oil for frying
  • Enough water to cover rice (see video)
  • Add any other aromatic vegetables of your choice (if you like) this is just the basic recipe.

For Yogurt

  • ½ cup coconut yogurt
  • ½ lemon zest & juice
  • ½ tsp garlic powder

For peri peri seasoning

  • 2 tsp sea salt
  • 2 tsp ground chilli powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp MSG (Optional)

Instructions
 

For Rice

  • Slice spring onion and save the green part for garnish.
  • Chop celery and peppers, mince garlic
  • Chop tomato and set aside
  • Heat sunflower oil to medium in pan
  • Add the vegetables and garlic and sauté till brown
  • Add the rice and cook for 1 minute.
  • Stir in the tomato paste and cook till it just start catching the bottom of the pan.
  • Season well with peri peri seasoning (see recipe)
  • Add tomato and cook for 1 minute.
  • Now pour in enough water to just cover
  • the rice - (please see video).
  • Bring just to the boil and turn heat down low.
  • Cover pan with a lid and cook till all water has evaporated!
  • Switch off heat and let it sit for 10 minutes.
  • “DO NOT STIR THE RICE. WE WANT IT TO FORM A DELICIOUS CRUST AT THE BOTTOM”

  • Mix all ingredients

  • 200 g ewedu leaves
  • ½ tsp powdered potash
  • 1 cup water
  • salt to taste
  • 1 seasoning cube
  • Locust beans (Iru)
  • 2 tsp ground crayfish

Amala Lafun

  • 400 g cassava flour
  • 2 cups water

Instructions
 

Ewedu Soup

  • Nicely pick just the leaves (no stem allowed), then go ahead and wash properly with a lot of water to remove any sand left on it.
  • Pour 1.5 cups of water to a cooking pot and heat to boiling point, add the potash, locust beans and condiments. Add washed ewedu leaves, cook for 7-10 minutes.
  • Then use the cooking broom to mash (more like pound) continuously inside the pot, this will turn the leaves to tiny bits after mashing for about five minutes.
  • Alternatively, You can also transfer into a blender and pulse twice, I think this way is easier and better. That was how I made the soup above, couldn’t find the ewedu broom.
  • Serve Ewedu plus stew and meat with Amala Lafun

  • In a pot, boil two cups of water.
  • On a medium heat, pour in cassava flour and stir and turn with a wooden spatula. Keep turning until it is smooth and not lumpy.

  • Knorr Aromat original
  • Robertson barbecue
  • Chillies crushed
  • Bay leaves
  • Salt

Instructions
 

  • Chakalaka( I made the fire and then put a pan of bit sunflower oil at the fire for 1 min.
  • Put the boerewors pieces in the pan and put all the ingredients needed in the boerewors eg: garlic crushed, knorr aromatic, Robertson barbecue, chillies and bay leaves, and close the pan for 10 min.
