Slice spring onion and save the green part for garnish.
Chop celery and peppers, mince garlic
Chop tomato and set aside
Heat sunflower oil to medium in pan
Add the vegetables and garlic and sauté till brown
Add the rice and cook for 1 minute.
Stir in the tomato paste and cook till it just start catching the bottom of the pan.
Season well with peri peri seasoning (see recipe)
Add tomato and cook for 1 minute.
Now pour in enough water to just cover
the rice - (please see video).
Bring just to the boil and turn heat down low.
Cover pan with a lid and cook till all water has evaporated!
Switch off heat and let it sit for 10 minutes.
