Later moved to London where I worked in some prestigious Hotels and mainly restaurant. Studied culinary arts at college whilst working my way through the ranks and become the pastry chef at a Michelin star restaurant “Arbutus”. Peri Peri Spiced Rice is a vibrant and flavorful dish that combines the aromatic heat of Peri Peri spices with the comforting texture of rice. Peri Peri Rice

Ingredients
  

For Rice

  • 1 spring onion (use green for garnish)
  • ½ stick celery
  • ½ red bell pepper
  • 2 cloves garlic
  • ½ cup rice
  • 1 small tomato
  • 1 tbsp tomato paste
  • Sunflower oil for frying
  • Enough water to cover rice (see video)
  • Add any other aromatic vegetables of your choice (if you like) this is just the basic recipe.

For Yogurt

  • ½ cup coconut yogurt
  • ½ lemon zest & juice
  • ½ tsp garlic powder

For peri peri seasoning

  • 2 tsp sea salt
  • 2 tsp ground chilli powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp MSG (Optional)

Instructions
 

For Rice

  • Slice spring onion and save the green part for garnish.
  • Chop celery and peppers, mince garlic
  • Chop tomato and set aside
  • Heat sunflower oil to medium in pan
  • Add the vegetables and garlic and sauté till brown
  • Add the rice and cook for 1 minute.
  • Stir in the tomato paste and cook till it just start catching the bottom of the pan.
  • Season well with peri peri seasoning (see recipe)
  • Add tomato and cook for 1 minute.
  • Now pour in enough water to just cover
  • the rice - (please see video).
  • Bring just to the boil and turn heat down low.
  • Cover pan with a lid and cook till all water has evaporated!
  • Switch off heat and let it sit for 10 minutes.
  • “DO NOT STIR THE RICE. WE WANT IT TO FORM A DELICIOUS CRUST AT THE BOTTOM”

  • Mix all ingredients
