Ojojo, also known as Yam Fritters is a traditional Nigerian snack or finger food made from grated Water Yam (Isu Ewura).

It is quite easy to make, incredibly filling; can be eaten before the start of a long day’s work, and undergoes the same procedure for making Akara (the whole process takes no more than 45mins).

What can be better than celebrating the season of rains with your favorite fritters? One such mouth-watering recipe that will be an interesting way to enjoy your monsoon is Yam Fritters.

Where Does Ojojo Come From?

It is a “finger food” popular among the Yorubas and ethnic groups in the western part of Nigeria.

What Is Ojojo Made From?

This easy-to-make fritter recipe is made from grated water yam, onions and peppers, cray fish and other spices.

I have to admit that yam fritters are one of my favorite foods. It was always one among my favorites as a kid. It was something my mother used to cook every Saturday before lunch.

When it was time to make it, I remember how much I enjoyed helping out in the kitchen. I once didn’t wait for them to cool before devouring them, and my tongue was severely burned.

That didn’t stop me from eating my favorite snack, though.

Is Ojojo Healthy?

Water yam contains a lot of nutrients beneficial to the body. It contains Vitamin C, A, B and E. These vitamins are known to have antioxidant properties.

They are also a source of carbohydrate and fibre. Also, it has anti-inflammatory properties that helps to reduce the risk of chronic disease.

How To Make Ojojo (Yam Fritter)

One thing I love about Ojojo is its versatility; although plain, you can be creative with it and add whatever you think will work.

You can add shredded beef and chicken to your recipe and you can also try them with chopped shrimps; both tasted really amazing.

I have noticed that most people enjoy this snack mostly when it is very crunchy on the outside but soft or fluffy on the inside.

However, not many people are able to achieve a mix with a consistency that makes the Ojojo fluffy yet crunchy on the outside.

I usually like to grate the water yam but some people find this process stressful and time wasting and therefore would prefer to use a blender. If you decide to use a blender, you are advised to chop the yam first into bits.

Water yam is really soft and easy to blend. But if you have to add water while blending it, do it with great care. Water yam itself contains enough water and you wouldn’t want your mix to be watery.

How Do I Make My Ojojo Crunchy?

Some people ask how they can get it to the consistency where it is really crunchy on the outside, fluffy on the inside and not watery.

What to do is to simply grate the yam; then run it through a food processor to whip it. The peeled yam may even go straight into the food processor or a blender and it needs no water to puree. Water yam is very very soft, so trust me it will be fine

Ingredients
  

  • ½ medium water yam
  • ½ cup crayfish
  • 2 habanero pepper
  • ½ onion
  • ½ tsp ginger
  • salt
  • oil for frying

Instructions
 

  • Peel yam by removing the skin with a knife; then drop the white part into cold water.
  • Wash and grate each the yam with the smaller side of a grater. 
  • Grate ginger and pepper on the small side. Grate the onion on the biggest side. 
  • Add the crayfish, salt and whisk. 
  • Heat oil to 350 degrees and drop little to medium sized dollops of the yam puree into the oil and fry.
  • Fry the yam balls until golden.

Donut Balls

Easy, from-scratch, donut balls.  These homemade donuts can be mixed up and fried in minutes. Unlike the Puff Puff, this donut recipe does not need a resting time.

It is very simple:  mix donut batter in clear mixing bowl with wooden spoon and fry in hot oil until golden. This dessert can be glazed or served with the classic sugared, chocolate ganache dipped, and filled with an orange scented raspberry sauce.

What Are Donut Balls?

Donut balls (spelled as doughnut in England and Commonwealth countries) are small, bite-sized donuts that were traditionally made from the dough taken from the center of ring donuts.

The “holes” are deep-fried just like regular donuts. They are then glazed with sugar, or dusted with fine sugar or powdered sugar.

These donut holes are round in shape but much smaller than regular donuts, making these dainty fried dough balls such a delight to the palate.

Origin Of Donut Holes

It is believed to be invented by a ship captain, Hanson Gregory, from Rockport, Maine. There are a lot of versions of the story on how he invented the donut with holes and here are two of my favorites.

He would often bring his mother’s “fried cakes” or what he calls them “greasy sinkers” to his trip but often find the middle raw and soaked with oil. So, he poked the center and fry both the donut and hole donuts again, and the rest is history.

The other version says that he will stick the fried cakes to the ship handles for easy snack access creating the holes.

Recipe Ingredients

The ingredients below are simple and can be easily found in your kitchen or any local groceries stores.

  • All-purpose Flour – the most versatile kind of flour there is, hence the name. My favorite kind of flour because it is always easy to work with, whether for cooking or baking cakes, pastries, and bread.
  • Granulated Sugar – not only it adds sweetness to the dough but it also gives moisture. It also promotes having a beautiful brown exterior of the donut holes as the sugar caramelizes while cooking. For garnishing, roll the bite-sized donuts to the sugar.
  • Baking Powder – is the key ingredient in making our sweet balls of happiness rise and become soft and fluffy since we are not using yeast in this recipe.
  • Salt – it balances the sweetness and enhances the flavor and even the color of your donuts.
  • Ground Nutmeg – has a warm, aromatic, and nutty flavor with subtle notes of clove adding richness to any dish and desserts.
  • Eggs – it acts as a binder to the dough and it is also responsible for making your donuts fluffy and soft with a rich and creamy taste.
  • Vanilla Extract – just a splash of enhances the flavor of any dessert, works like magic! For the glaze, you may want to use less of it if you want to make your sugar glaze white.
  • Whole Milk – adding liquid such as milk to the flour makes it easier to combine and incorporate all the ingredients together to make these homemade donut holes. Plus, the milk adds creaminess and richness to the flavor compared to just adding water.
  • Unsalted Butter – you need to melt the butter to add as a liquid. Again, to make the dough easier to work with while adding richness to the flavor.
  • Oil – depending on the pot, you’ll be needing at least 3 inches deep of oil for frying. I recommend neutral-tasting oil like vegetable or canola oil.
  • Powdered Or Confectioners’ Sugar – these two can be used interchangeably since they both have the same texture. The only difference is that confectioners’ sugar has a little bit of cornstarch. It is commonly used to glaze desserts such as glazed donut holes.
  • Ground Cinnamon – has a sweet and woody flavor, interestingly can make any dessert flavorful. Classic cinnamon sugar-coated ones are my favorite.

Ingredient Substitutions

Don’t worry if don’t have some of the ingredients needed, you can use some of these substitutions below.

  • Baking Powder – Mix 2 teaspoons of cream of tartar and 1 teaspoon of baking soda. Remember the 2:1 ratio when using it as a substitute for other recipes.
  • Eggs – 1 medium mashed banana or ½ cup (8 tablespoons) of apple sauce.
  • All-purpose Flour – Gluten-free baking flour using a 1:1 ratio.
  • Granulated Sugar –  for a healthier option, you may opt to use sugar-free substitutes such as sucralose, xylitol, and erythritol using a 1:1 ratio.

How To Make Donut Balls?

Homemade donut holes are made by dropping a small ball of dough into hot oil. The round shape can be achieved through the use of a small ice cream scoop or a spoon.

For this easy donut holes recipe, I used the former, which yields beautiful, round and spherical shape of these bite-sized sweet treats.

Yeast Or No Yeast?

There are two versions of recipe for donut holes, one with yeast, and one without yeast. This recipe is without yeast, making it the easiest recipe ever.

Tips For Frying

  • The perfect oil temperature for frying is 375F.
  • Fry the donut holes for about 1-2 minutes on both sides, turning only once.
  • Fry them in batches of about 5-6 at a time.
  • After frying, drain them on paper towels.

Storage Instructions

Although these bite-sized goodies (donut balls) are best served and consumed immediately, and I doubt that there will be any leftovers. You can store them in a clean and dry container with a cover and they can stay fresh at:

  • Room Temperature for up to 2 days.
  • Refrigerated for about 5-7 days

Note: texture might change the longer they are stored.

  • 2 cup all purpose flour

  • salt a pinch
  • 1 tbsp baking powder
  • 2 eggs
  • 1 cup milk
  • 1 tbsp vanilla extract
  • 1 tsp nutmeg

Instructions
 

  • Combine flour, sugar, baking powder and salt and mix.
  • Cover and refrigerate for 1 hour (Optional).
  • Pour oil into heavy bottomed pan (dutch ovens or deep cast iron pans are fabulous for frying), until oil is about 2 inches deep. Heat over medium heat until oil comes up to 350 F degrees. Adjust heat level as needed to maintain the 350 degree temperature.
  • Once oil has reached 350 F degrees, use a cookie scoop to scoop up batter and drop them into the hot oil. Be careful when dropping the batter, do it from just above the oil so you minimize splashing!
  • Fry doughnuts in hot oil until golden brown, turning once. Remove from oil to drain on paper plates.
  • Serve with milk, melted chocolate or vanilla sugar.

  • 2 tbsp tomato paste
  • 2 tomatoes fresh

This is the African version of the Chinese-take out dish Pork Fried Rice. Anything involving rice and pork is likely to be a winner with a Chinese audience (or any audience that loves Chinese food).

So if you have a few friends that love Chinese food, this is the dish to prepare to show them your culinary skills.

What Is Fried Rice?

Fried rice originated in China during the Sui Dynasty and has become a popular stir-fried dish in many different countries and across cultures.

In its simplest terms, fried rice is exactly what its name implies: cooked rice that’s reheated with oil. Today, there are thousands of recipes and countless restaurant variations, regional specialties, and new twists on the old classics. This version of pork fried rice is our go-to when we want to use ground pork.

Ingredients For Pork Fried Rice

Tips for Cooking Pork Fried Rice

There are two keys for great fried rice:

  1. Make sure the rice is chilled and dry. This keeps the grains from clumping together. When you add the rice to the skillet, stir it into the oil to separate the grains, then let it sit without stirring for a minute or two to develop some browning color. Great fried rice will have no clumped rice; individual grains mixed with the add-ins is what you’re going for!
  2. Make sure to cook the ingredients in the right order. Cook the pork first, remove from the skillet, then cook the onions, garlic, ginger, and frozen peas and carrots. Once those have cooked, remove them from the skillet, cook the rice and eggs, and then stir everything back together! Cooking in phases ensures you don’t burn any single ingredient.

  • To Store. Store fried rice in an airtight storage container for up to 3 days in the fridge.

  • Boil the pork belly with the garlic, ginger and cube for 30 mins. Fry carefully and set aside.

  • Heat up a wok and add 2 tablespoon of oil. Add the chopped onion and bell pepper and fry for 3 minutes. 
  • Add the rice, and frozen vegetable and soy sauce. Fry on high heat for about 5 minutes or until the rice is hot and fragrant.

  • Add the eggs and fried pork. Stir for a minute then turn the heat off. This is now ready to serve.

I know only less than a handful of people that do not like sweet potatoes. Sweet potato is known to be very filling and quite sweet. It’s like yam soaked in nature’s sweetness. The sweet potato is a dicotyledonous plant that belongs to the bindweed or morning glory family, Convolvulaceae. Its large, starchy, sweet-tasting, tuberous roots are a root vegetable. The young leaves and shoots are sometimes eaten as greens. They come in a variety of sizes and colors — including orange, white, and purple — and are rich in vitamins, minerals, antioxidants, and fiber.

 

Health Benefits of Sweet Potato

  • Supports the immune system: Sweet potatoes are an excellent source of beta-carotene, which can be converted to vitamin A and help support your immune system and gut health. Eating them regularly can help prevent vitamin A deficiency.
  • Very Nutritious: Sweet potatoes are starchy root vegetables that are rich in fiber, vitamins, and minerals. They’re also high in antioxidants that protect your body from free radical damage and chronic disease.
  • Good for digestion: Sweet potatoes are high in fibre, which has been shown to promote a healthy digestive system.   • Boiled Sweet Potatoes with Sauce; boil potatoes with salt until soft. Enjoy, with any sauce of your choice. It could be egg sauce, tomato sauce or vegetable sauce.
  • Fried sweet potatoes; you can cut your potatoes into your prefered size and deep fry it. Enjoy with fish stew (or any stew), or egg sauce.
  • Sweet potato porridge; just like yam, you can make a delicious sweet potato porridge, that contains vegetables and smoked fish.

Yam tubers play very significant roles in the socioeconomic lives of the people of west Africa, the Caribbean, islands of the South Pacific, South-East Asia, India and parts of Brazil. Nigeria contributes significantly to the world’s total production of yam.

The composition of yam fibers varies according to species, culture, climate/ edaphic factors of the environment under which it was grown, its maturity at harvest and storage period.

Yam tubers have different species, and they vary in moisture content, carbohydrate, fat, crude protein, crude fibre and ash.

  • Alata (purple yam) is a specie that has a moisture content of 73.83%. Carbohydrate, 83.33 %. Fat, 0.58%. Crude protein, 7.26%. Crude fibre, 2.29%. Ash, 5.16%.
  • Cayenesis (commonly known as white yam) contains moisture content 83.40%. Carbohydrate, 87.82%. Fat, 0.39%. Crude protein, 6.15%. Crude fibre, 2.44%. Ash, 3.20%.
  • Rotundata contains moisture content 75.90. Carbohydrate, 90.11%. Fat, 0.34. Crude protein, 4.42%. Crude fibre, 1.45%. Ash, 2.75%.
  • Esculenta contains moisture content 81.15%. Carbohydrate, 88.62%. Fat, 0.05%. Crude protein, 7.73%. Crude fibre, 0.95%. Ash, 2.75%.
  • Clumetorum contains moisture content 83.29%. Carbohydrate, 83.36%. Fat, 1.21%. Crude protein, 11.73%. Crude fibre, 1.02%. Ash, 2.68%.

 

The carbohydrate in yam is mainly starch, with only small amount of sugar. The starch is heat stable. When heated, the starch swells and becomes resistant to fragmentation and solubilisation and this accounts for the need to pound very well during pounded yam production. Amylopectin is the main constituent of the carbohydrate, with amylopectin accounting for 10-28% of the starch. Amylose particularly influences the properties of starch. Dioscorea rotundata is the most viscous of all the yam species and this may be the reason most people prefer it for producing Fufu or pounded yam.

Yam tubers are the most outstanding, among other roots and tubers, in terms of the relatively high protein content, which occurs as a mucin or gum that exudes readily from cut surfaces. The proteins are low in sulphur containing amino acids, methionine and cystine.

The vitamin c content of yam tubers is between 6-10mg/ 100g tuber tissue. Traces is vitamins A and B are also present. Calcium, iron and phosphorus are among the components of the mineral fraction of the tuner. Some yam species contain high quantity of polyphenolic compounds which undergo browning via enzymatic oxidation.

Yam is traditionally prepared into boiled yam, roasted yam, fried yam, baked yam and pounded yam. Innovatively, instant pounded yam flour is prepared by washing the yam tubers, peeling, dicing, sulpluting, steaming/ blanching, drying, grinding and packaging.

  • 4 potatoes peeled and cubed
  • 2 carrot peeled and cubed
  • tsp salt
  • 1 beet
  • 5 eggs
  • ½ onion minced

  • 1 tsp vinegar
  • 4 tbsp olive oil

Instructions
 

  • Boil potatoes in water with 1 teaspoon salt for 5 minutes. Add the carrot and boil for an additional 5 minutes or until tender.
  • Boil beet and the eggs separately in water with 1 teaspoon salt until tender, then peel and dice finely. (Remove the eggs after 10 mins of ebullition)
  • Boil eggs separately in water with 1/4 teaspoon salt until hard, about 10 minutes. Cool and chop eggs.
  • In a bowl, place cubed potatoes, diced beet, chopped eggs, carrots and onion, the mayonnaise, the mustard, olive oil and salt. Stir and add salt to taste, if using.

  • 1 chicken cut in pieces

  • Turn the bags and knead the marinating chicken once or twice while it’s in the refrigerator.
  • When you are ready to cook, take the chicken out of the refrigerator, line a large roasting pan with foil, lay a rack over the pan so air can circulate under the roasting chicken, and pre-heat your oven to 425°F. 
  • Once the oven is hot, put the pan with the chicken in the oven, and leave the door closed. Turn the chicken pieces once after 30 minutes of cooking time, then roast for another 25 to 30 minutes, or until slightly charred on the second side. Poke one with a skewer to make sure the juices run clear.
  • Remove the chicken to a warm platter and serve.

How To Make African Banana Fritters

These easy banana fritters are like airy banana beignets with a burst of banana flavor. They are extremely easy to make, only requiring 5 ingredients, and put your ripe bananas to good use.

They are made with mashed banana, flour, sugar, eggs, and milk. That’s it. It’s really worth trying!

Recipe Tips

  1. Use ripe bananas. This is key as the mashing process will be smoother and flavor sweeter. Mash unpeeled bananas, using a fork, into a purée. A culinary robot could be used scraping off the sides if needed. It is also possible to use a blender to purée the bananas, however, do not add water and use a stick blender. Regardless of the technique, the goal is to obtain a pure banana purée.

  2. Mix dry ingredients (flour, sugar) and add eggs, milk, and extract (optional). The use of rum extract is not needed, the fritters will taste great especially if using ripe bananas.

  3. Incorporate banana purée into the batter until the mix is homogeneous. Cover and rest at room temperature.

  4. Fry. Take care to monitor this step. Once the oil is hot, you may need to reduce the temperature if fritters are turning brown too quickly. Indeed, the idea is to cook them through AND turn them golden brown. You can set your deep fryer to 370F. It is important to avoid eating raw batter.

Serving And Reheating

  • 3 overly ripe bananas large

  • Carefully place spoonful of the batter into the hot oil and fry for 3-4- minutes, or until the fritters are crisp and golden-brown (you may need to do this in batches).
  • Remove from the pan with a slotted spoon and set aside.
  • You may drain on paper napkin to remove any excess oil
