You’re probably wondering if rum cake, or boozy desserts in general, can get you drunk. The majority of people believe that if you infuse alcohol into a baked recipe, it will cook off.

However, excessive consumption of alcohol-infused baked goods can lead to intoxication.

If it contains more than 5% alcohol by volume, such as the Tortuga rum cake, you may become tipsy or completely intoxicated, depending on your consumption and alcohol tolerance. Furthermore, you’ll get a real thrill out of the rum, especially if you add it after it’s completed baking.

How To Make Rum Cake With Cake Mix

The cake is so ridiculously easy to make. Dump all the ingredients in a bowl at once, mix, bake. After baking, poke holes with a fork over the top (bottom after you invert it) of the cake while it’s still in the pan, add rum sauce, invert, and repeat with hole poking and sauce adding.

If the rum cake glaze crystallizes before you can drizzle it over the inverted cake, don’t panic! Just give it a good stir and drizzle away.

A high-quality rum like Bacardi Spiced is a great choice, especially for the glaze where the flavor will be more pronounced.

Can I Make This Cake In Advance?

Yes! I find the cake tastes better as time passes and that it peaks about day 3, which makes it an awesome make-ahead-of-the-party kind of cake.

Make sure you take note of the useful tips and tricks below. They’ll help you make a killer rum cake!

  • Grease & Flour the Pan Well: I like to both grease and flour my pan before I pour in the cake batter. This helps keep the finished cake from sticking.
  • Stir the Simple Syrup Frequently: It’s important to stir the simple syrup constantly to prevent it from burning. If it does burn, you’ll have to start from scratch.
  • Remember to Remove the Cake From the Pan Before Soaking it: If you don’t take your cake out of the pan before you soak it in the glaze, it’s more likely to get stuck. Make sure you don’t skip this step.
  • Don’t Let the Cake Soak for Too Long: Soak the cake for no more or less than 30 minutes. This is the amount of time that will give you the best flavor without causing the cake to stick to the pan.
  • When Making The Glaze, Use Caution: Focus and take small children out of the kitchen because the mixture is insanely hot and flammable and you’re going to be whisking the entire time.
  • Allow Cake to Rest Before Serving: Allow to rest for about 1 to 2 hours to absorb sauce before slicing and serving. The flavors marry as time passes and I find this cake tastes better as time passes.

Storage Instructions

This cake should be kept in an airtight container – you can either store it in the fridge or keep it at room temperature. It’ll last for up to 5 days at room temperature and up to a week in the fridge.

I personally love to eat it cold, as it enhances the flavors while maintaining the moisture. So yummy!

Does Rum Cake Need To Be Refrigerated?

This rum cake fairs well at room temperature but you should keep it covered.  If you would like to store it for longer then the cake can be refrigerated for a week or frozen for two months.

Butter cakes are ALWAYS enjoyed slightly warm so go ahead and pop your cake into the oven at 300F for a few minutes or microwave a piece for 10-15 seconds before enjoying.

Does Rum Cake Freeze Well?

Yes indeed. Either cut the cake in half or into individual slices, wrap each portion in plastic wrap and freeze them in an airtight container.

Frozen cake will last for up to 2 months. Unwrap it and thaw it out in the fridge or on the counter before enjoying it.

  • 2 cup all purpose flour
  • cup corn starch
  • cup sugar
  • 4 tsp baking powder
  • ½ tsp salt
  • 5 eggs
  • ½ cup vegetable oil
  • ½ cup milk
  • ½ tsp lemon juice
  • ½ cup dark rum
  • 2 tsp vanilla
  • ¼ tsp rum flavoring
  • ¼ cup dry crumbs for dusting baking pan

Rum Butter Sauce

  • ½ cup unsalted butter 125 g
  • ¼ cup water
  • ¼-½ cup sugar
  • ¼-½ cup dark rum
  • ½ tsp vanilla

Instructions
 

  • Using pastry brush, oil the bundt cake pan and sprinkle it with fine dry bread crumbs so that the cake doesn’t stick. Set aside.
  • In a large bowl, combine flour, cornstarch, sugar, baking powder and salt.
  • In another bowl, mix eggs with oil, milk, lemon juice, rum, vanilla extract and rum flavoring. 
  • Mix the dry ingredients and the wet ingredients and beat on medium speed for 1-2 minutes, or until the batter is smooth.
  • Pour the batter into prepared bundt cake pan and bake in 350°F (175°C) oven for about 20 minutes. Rotate the cake, set the temperature to 300°F (150°C) and bake for another 20 minutes. Check with wooden skewer for doneness.

Rum Butter Sauce

  • In a small saucepan, cook butter, water, sugar, rum and vanilla for a few minutes or until sugar dissolves.
  • After the cake has cooled a little, use a skewer to poke lots of holes (at least 20) all over the cake. SLOWLY pour the sauce over the cake. Let it rest until the sauce is absorbed, about 10 minutes.
  • At this point either serve the cake, or cover it and until serving.

I think the best thing is to eat them as soon as possible. Although I have kept mine in the fridge for a couple of days and just reheated them either in the oven or microwave.

  • In your robot or bread machine, mix the flour, semolina salt, sugar and add small warm water until obtaining a very smooth dough (about 5min at medium speed)
  • Form small balls and let stand 5min
  • Spread the dough with the butter / oil mixture, without tearing it
  • Add the ground meat and roll
  • Bake in the oven at 350F for 18 to 20 minutes until lightly golden

What Are Empanadas?

An empanada is a fried turnover from the Latin America, European Philippines or Indonesian culture, they are perfect little pockets of cheesy beef.  The filling can consist of meat, cheese and vegetables that are tucked inside the pastry and either baked or fried. Thankfully these little yum yum are easy to make.

How To Make Crispy Beef Empanadas

The key to fried empanadas is learning how to make a good dough for frying.

Many recipes ask you to roll out dough and cut circles with something to make your empanadas, but I find that wasteful and, well, just harder than it is to make your dough, measure out balls about 50 grams, which is a little less than 2 ounces, set those balls in a plastic bag for an hour or two, then using a tortilla press to make perfect rounds every time.

The rest time lets the gluten in the dough relax, which allows you to make the rounds with a press. If you don’t wait, they will contract dramatically.

Do I Bake Or Fry My Empanadas?

Well, I have to tell you, You can do it both ways. You can brush the tops of the finished empanadas with egg wash and bake them if you don’t want to fry, but they really aren’t as delicious in my opinion.

An Air fryer would probably do the trick too, but deep frying is really the best way to make these crispy beef empanadas taste the best. And let’s be honest, we aren’t deep frying all the foods these days so once in a while…let’s go for it.

Also, you don’t need an actual deep fryer or a Fry Daddy, just a deep pot filled 1/3 of the way with oil and a deep fry thermometer will work perfectly. We have never owned or purchased a deep fryer for the sole purpose of frying food and I can’t say that we ever will!

Can I Make It Ahead of Time?

Oh yes, and we do it pretty often. You can make these Easy Crispy Beef Empanadas, bake them and let them cool. Freeze them in freezer bags and then pull the out when it’s party time. Bake them from frozen in a 400 degree oven for about 25-30 minutes and they’re ready to go! Because who wants to be frying up food right before your guests arrive?

Ingredients
  

For the Dough

  • 1 cup all purpose flour
  • ½ tbsp clarified butter
  • salt a pinch
  • cup water
  • 1 tsp oil

For the Beef Mixture

  • 1 lb ground beef
  • 2 tbsp garlic
  • 1 tsp ginger
  • 1 bouillon cube
  • ½ cup onion
  • bell pepper
  • salt to taste

Instructions
 

For the Dough

  • In a large mixing bowl, add flour and salt. 
  • Heat the butter in a small pan and pour in the flour.
  • Mix butter well with flour till it has a bread-crumb like texture
  • Add water and knead the dough. Dough should be stiff.
  • When dough is kneaded, leave it on counter for at least 15 minutes to rest.

For the Beef Mixture

  • For the beef mixture, over medium-high heat up the oil and add ground beef, onion, belle pepper, garlic, ginger, cube and salt. and cook until browned.

Making the Empanadas

  • Working with one ball at a time on a floured surface, roll dough out to a ⅛ of an inch thick. Ensure the dough does not stick to your floured surface by flipping it over and turning it occasionally while rolling.
  • Using a five-inch diameter bowl cut the dough into circles. Add a sheet of wax paper in-between each disc to prevent sticking.
  • Using one disc as a time add 2 tablespoons of ground meat to the center of the disc. Close and flatten. 
  • Fry empanadas until golden brown and bubbled on both sides, about 2 minutes, carefully flipping half way through. Make sure to not crowd the empanadas or the oil temperature will cool and they will be soggy and oily instead of crisp, crunchy and dry.
  • Garnish empanadas with finely chopped cilantro sprinkled on top and enjoy!

  • 4 large onions sliced

Instructions
 

  • Douse the fish with the marinate and refrigerate for an hour or preferably overnight.
  • In large skillet heat oil over medium heat, until hot, add the fish, cook each side- for about 5-7 minutes until cooked through and crispy on both sides. Remove fish and set aside. 
  • Heat a pan and fry the onions and marinate juice left over from the fish for about 5 minutes. Adjust for seasonings, adding salt and pepper to taste.
  • Place the fish back in the onions sauce.
  • Simmer for another 5-8 minutes until flavors come together
  • Serve it with some baked and fried potatoes

What is Jollof Rice?

The name Jollof is said to come from the Wolof people of Senegal. Known by many different names in different countries, Jollof is a one-pot rice dish often called a “reddish one-pot dish”.

It is popular in many West African countries including Nigeria, Ghana, Gambia, Senegal, Cameroon, Mali, Sierra, Ivory Coast and Liberia. There are several regional variations, the difference being the method of cooking or the ingredients used .

Everybody is quite passionate and possessive over their beloved jollof, ready to go to war proving theirs is the BEST out there. These verbal “Jollof Wars” are well known, especially between Nigeria and Ghana.

Typically this dish is rice cooked in a tomato based sauce or broth. Often it is supplemented by some veggies and meats like chicken, beef or goat, sometimes even seafood.

Origin Of Jollof Rice

Based on the name of the Jollof rice, one can easily conclude that its origins can be traced to the Senegambian region that was once ruled by the Jolof Empire (1350 to 1549). The Jolof Empire (also Djolof, Wolof), which controlled parts of Senegal and the Gambia was established as a vassal of the Mali Empire.

At that time, the region extending from the Gambia River to Liberia was also known as the Grain or Rice coast because a number of grains including rice and millet were grown on the banks of the Senegal River.

However, James McCann in his book, Stirring the Pot claims that Jollof rice may have propagated throughout West Africa with the Djula people, tradesmen from the Mali Empire, historically referred to as the Manden Kurufaba, or just Manden (c. 1230 to 1670).

The Senegalese version of this traditional dish, thieboudienne, which features fried fish and that I cooked last year, seems to have originated much later during the nineteenth century as it was created by a woman from Saint Louis, on the northwest coast of the country, called Penda Mbaye.

Ingredients
  

  • 4 cups rice jasmine
  • 1 chicken cut into pieces
  • 2 tomatoes
  • 4 tbsp tomato paste
  • 1 tsp cayenne
  • 5 clove garlic
  • 2 tbsp ginger
  • 1 onion
  • 2 bouillon cubes
  • 1 cup oil
  • 1 cabbage
  • 2 carrots
  • 10 10 habanero pepper optional
  • pinch of baking soda
  • salt to taste

Instructions
 

  • Blend the garlic, ginger, ½ onion, clove.
  • Season the chicken with half of the blended spices, add the cube and salt to taste. Add 1/2 sliced onion. Add water and cook until tender. Fry the chicken.
  • Add the tomato puree, the tomato paste, ½ onion puree, the cube, the remaining blended spices, the cayenne, the carrots sliced in half and the cabbage slice, a pinch of baking soda and salt to taste. 
  • Add 7 cups of the water to the tomato mixture add the watched rice and salt to taste. Cook the rice.
  • When all the water evaporates from the rice add the habanero pepper.
  • Serve the rice with the side of vegetable and the chicken.

Ivorian Alloco Recipe and Braised Chicken

Alloco are Ivorian fried plantains, this dish is served with crushed chili and braised chicken. For the Ivorians, the name Aloco gets its name from the Baoulé – a large Akan ethnic group in the Eastern Ivory Coast – word for loko that signified when a plantian was ripe.

What Is Alloco?

Alloco (Aloco or Alloko) itself is very simply (and somewhat blandly) fried plantains. Plantains are a staple crop throughout much of Western Africa, but it would still be hard to imagine that a recipe of simply fried plantains would be as ubiquitous as it is.

What really rounds out the aloco experience, however, is what it is served with. Generally, alloco is served as an accompaniment to either a larger meal or another corresponding snack. Three of the more common foods you’d see side by side with aloco are a freshly grilled fish, braised Chicken and/or some boiled eggs. Then, on top of the aloco itself is a spicy and powerful sauce de piment to liven up the flavors of the plantains and more.

Coupled with a full meal, aloco is hugely popular not only throughout the Ivory Coast but also in neighboring countries as well. Benin and Nigeria both have a fried plantain dish called dodo, Ghana has kelewele, Togo has amadan, and Congo has makemba.

The Allocodrome

The aloco dish is so incredibly popular because it has its own namesake locale!

Located in the relatively upscale Cocody district of Abidjan, the Ivorian capital, the Allocodrome is an open air space space where locals go to enjoy some great Ivorian food, some great company and – most often – some good people watching.

The Allocodrome was birthed in the mid-80s around a site where street vendors (mostly women) were already selling aloco as a snack to passersby. Fast forward a few decades, and it has become a bustling and lively hub for pretty much any sort of social situation.

Of course, you can find alloco all over the place, but you’ll also be able to find other Ivorian foods like attieke or kedjenou in case you’re looking for something a little lighter as well.

Making The Best Alloco And Braised Chicken

As we mentioned earlier, the alloco recipe itself – if you wanted to strip it down to what it fundamentally is – is nothing more than plantains fried in oil. To make alloco right, though, you need to be sure you’ve gotten the right type of plantain.

How To Get The Right “Ripe Type” Of Plantain

Over the lifecycle of a plantain, it goes into four different stages of ripeness. First, the plantain goes into a green stage, where it’s not ripe yet and fairly hardened and starchy.

Next, the plantain starts to “semi-ripen” as it turns more yellow than green. Here, the plantain isn’t fully ripe yet, and it begins to take on a bit of a sweeter texture. Another pretty useful characteristic for identifying semi-ripe plantains are that they start to have black spots around the plantain’s peel, but they’re not everywhere.

After semi-ripeness, the plantain fully ripens and its taste sweetens to a point similar to a banana. The outer skin starts to transition from a goldenrod yellow to a darker brown, and you’ll find more and more blackened spots around the peel as well. These types of plantains are great for sweeter plantain dishes and for molding into different shapes and styles (i.e. plantain balls).

Finally, you’re at the very ripe stage. The skin is completely blackened, and you would presume that the plantain inside is no longer any good, but you’d actually be wrong! Here, the plantain is still good, and it’s become extra sweet and mushy. So long as you remove it from its withering skin in time, a very ripe plantain can be used to make delicious pudding desserts and anything else that might be a little softer in texture.

For alloco, we found that the best type of plantain was one that teetered in between the semi-ripe and the ripe stages. It’s generally better to veer a little more towards the semi-ripe stage so that you don’t accidentally make a fried plantain dessert, but it’s definitely a good sign to find a plantain with blackened spots and a yellowish skin to use for your alloco.

 

All in all, though, alloco is an absolute breeze to make and, when accompanied with a good braised chicken and another dish, makes for a winning midday meal combination. Enjoy!

For the Alloco

  • Some ripe plantains
  • salt
  • Oil for frying

For the Chicken

  • 6 chicken legs
  • cup cilantro
  • cup fresh oregano
  • cup onion
  • 4 cloves garlic
  • 2 red hot chili pepper or substitute with ½ a teaspoon of red pepper flakes
  • ¾ cup oil
  • 2 tbsp lemon juice
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 bouillon cube

Instructions
 

For the Alloco

  • Peel and cut the plantains into cubes.
  • Then salt the bananas.
  • Heat the oil in a large skillet and fry the plantain until each side is golden brown.
  • Remove and place them in a paper towel to absorb the excess oil.

For the Chicken

  • Bend all the spices together all of the ingredients and set aside.
  • Place the chicken legs in a medium bowl, add the marinade. Cover the bowl and refrigerate for at least several hours, or better yet, overnight and up to 24 hours.
  • Preheat the grill to 300F at the grate level. Basically, the grill should not be very hot.
  • Grill chicken legs over direct heat, flipping frequently, about every 3 minutes until the chicken is cooked through and internal temperature has reached a minim of 165F.
  • Let the chicken rest for 3 minutes and serve with the alloco

  • Eggs: Eggs are a very good source of inexpensive, high quality protein. The beaten egg should be carefully fried in a medium-hot oil and later folded in the rice. For this recipe, I skipped the eggs.
  • Other proteins: You can easily switch things around and use whatever leftover you have in the fridge. Although for this recipe I used fried liver, you can use precooked chicken, pork, beef or shrimp. You can also swap the rice with quinoa.

Tips To Make The Best Liver Fried Rice.

  • To get the best “fried’ rice use clod rice because a fresh batch of rice tend to get soggy and stick to the bottom of the pan. For this recipe, I freshly made the rice, spread it on a baking sheet and refrigerated for about an hour until it completely cooled (you can also freeze it for 15 to 20 mins).
  • Always add vegetables to your fried rice. Fresh vegetable taste better but I use the frozen mix vegetable – it does the job. The vegetables add a beautiful color and a sweet taste to the fried rice.
  • The number 1 secret to a fried rice is high heat. The heat makes the rice and the vegetable crisp.

Ingredients
  

  • 2 cup rice long-grain white rice like Jasmine is perfect for fried rice
  • 2 cup chopped mixed vegetables bell pepper, spring onion, carrots, sweet corn, peas and green beans
  • 2 tbsp vegetable oil
  • 2 onions chopped
  • 2 clove
  • 2 allspice whole
  • 6 clove garlic
  • 2 bouillon cube
  • salt to taste
  • 10 chicken pieces
  • 300 g sliced beef liver
  • canola oil for frying

Instructions
 

  • Blend ½ onion, cloves, allspice, garlic and ginger.
  • Rinse chicken, add ½ seasonings, cube and salt. 
  • Cut the liver in cube, add ½ seasonings, cube and salt
  • Cover both and refrigerate overnight or at least for 4 hours.
  • Add about ½ liter to the chicken and boil for 30 min.
  • Add about ¼ liter to the liver and boil for 15 min.
  • Fry the chicken for 7-10 minutes till center is all cooked (outside will be dark, golden brown)
  • Lay paper towel on a plate to drain excess oil, transfer fried chicken to plate
  • Prepare the rice by rinsing in cold water until the water drains clear. 
  • Add 1½ cups of water to the chicken stock and bring to a boil.
  • Add the rice and cook on a medium heat until fluffy. Once the rice is cooked, fluff with a fork and lift the lid to cool down the rice. Spread it on a baking sheet and refrigerated for about an hour until it completely cooled (you can also freeze it for 15 to 20 mins).
  • Heat a large wok with 2 tablespoon of oil. Fry the chopped liver first until slightly brown then add the remaining onions. 
  • After~5 mins, add the rest of the vegetables and continue to fry the mix until it’s slightly brown but not burnt.
  • Create a hole in the wok by pushing aside the mix so you can add the cooked rice . Turn up the heat and mix together to create that perfect fried rice dish.
  • Serve with the chicken
