Waakye

Waakye is a supremely popular morning meal in Ghana but can be eaten throughout the day. Filling and flavourful, it combines beans, rice, moist gariĀ (ground cassava), stew and spaghetti (the only non-Ghanaian part of the dish).

This is one of the most cherished ghana dish in most households in Ghana. As the name suggests, the main ingredients in this dish are rice and beans which are both boiled in water with millet leaves till they become soft. The delicacy is named after the millet leaves which are locally referred to as waakye.

It is normally accompanied by yellowish granulated cassava, tomato sauce, and a hot black pepper sauce referred to as ā€˜shito’. Waakye is eaten with mostly cow meat and eggs, but others also add chicken or guinea fowl. In this post, I share a recipe for quick and easy Waakye.

What Is Waakye?

It is a Ghanaian rice and beans dish, which pronounced as ā€œwa-cheeā€ , it is one of the most popular street food in the country.

It is sold by street side vendors, wrapped in banana leaves and served with multiple of the the following sides; lamb stew, spaghetti (talia), avocado, shito (fish sauce), kelewele (fried plantain), fried fish, garri fotor, vegetable salad, egg, meat or fish.

Waakye makes the perfect ā€œfully loaded plateā€ of food. It can be a complete meal because of the different accompaniments. It is also popular in other West African countries, but just called different names. On the streets of Lagos in Nigeria, it is called ā€œwankeā€, while the Togolese call it ā€œayimolouā€.

How To Prepare Waakye

This dish is easy, quick, and it tastes delicious. If this is your first time making it , trust me you would love it. It is nice and look wonderful.

Here is what you will need;

  • Waakye Leaves:Ā This leaf sheath of West African sorghum bicolor variety is the star of the this recipe. It gives Ghanaian wakye its distinctive reddish-brown colour; it is known as “poporo oka” baba in Yoruba language, and “adako” in Togo. The leaves basically acts as food colorant in this dish, with the rice and beans taking on its leached colour. It is also rich in antixoidants and some essential nutrients. The quantity of waakye leaves used determines how deep the colour of the dish is.
  • Beans:Ā Black eye bean is traditionally used for waakye recipe and the colour change after cooking from white to deep red is dramatic. However, you can use any beans which is available.
  • Rice:Ā Ghanaians use jasmine rice traditionally, but you can also use any non-stick rice as long as you know the cooking time so it doesn’t turn to mush from overcooking. The ratio of rice to beans depends on personal preference. I prefer to 2:1, while others prefer 1:1. Think about whether you want more beans or rice in the dish and decide your preferred ratio.
  • Baking soda: I did not use this ingredient, but a lot of waakye recipe call for baking soda or kaun as an optional ingredient. Kaun, also called kanwa and akaun in West Africa is lake salt and a form of sodium bicarbonate used in cooking. It is used interchangeably with baking soda (also sodium bicarbonate) as a tenderizer in this Ghana rice and beans recipe. It helps the beans to soften more quickly, reducing the cooking time.

What Does Baking Soda Do To Waakye?

It adds a lot of nutrients, Baking Soda/Salt Petre (Potassium Nitrate): Baking soda or Salt Petre is essential in this recipe. ItĀ makes the beans cook faster and softer. It also darkens the rice.

Ingredients
  

  • 2 cup black eyed beans
  • 2-4 dried millet stalk leaves
  • 4 cup jasmine rice
  • 3 tbsp oil
  • salt to taste

Instructions
 

  • Pick stones and grits from the beans.
  • Wash the beans and add into the pressure cooker.
  • Wash the waakye leaves and also add into the pressure cookers. Pour in water up to the minimum level on the pot.
  • Close the valve of the pressure cooker and leave until it reaches full pressure. This should take no more than 15 mins.
  • One it reaches full pressure, reduce the heat and leave for additional 10 mins for the beans to cook.
  • Remove from heat and allow to cool down naturally to depressurize. This should take around 20 mins.
  • Once the pot is adequately cooled. Unlock the lid.
  • Pour the beans with the cooking liquid and the waakye leaves into another pot. Wash the rice and pour into the pot too.
  • Add more water if needed so there is enough to cook the rice. Add some salt and cover the pot.
  • Allow the rice to cook. The time for this depends on the type of rice used. Check pack instructions if you are not sure.
  • Remove the waakye leaves and serve with your favorite side.

History of Fried Chicken

Like many Southern foods, its history can be traced back to Scots-Irish immigrants and slaves of West African descent.

The fried chicken was often associated with the poor, who could not afford beef or pork. Unlike the English, who baked or boiled their chicken, the Scots pan-fried it for better flavor. When it was introduced to the American South, it quickly became a favorite. However, it was unseasoned, as is typical of traditional Scottish cuisine.

It began to change when West Africans were brought to the American South as slaves. Slaves assigned to the kitchen began seasoning the chicken, enhancing its flavor.

Because enslaved and segregated women were allowed to keep chickens, it quickly became a way for them to earn money. However, due to the high cost, it was reserved for special occasions in their community, as it had been in Africa.

How To Eat Fried Chicken

Fried chicken has been described as “crunchy,” “juicy,” and “crispy.” The dish has also been referred to as “spicy” and “salty.” To add a spicy flavor, fried chicken is sometimes topped with chili-like paprika or hot sauce.

This is especially common in fast-food restaurants like KFC. Traditionally, the dish is served with mashed potatoes, gravy, macaroni and cheese, coleslaw, corn, or biscuits.

For the Chicken

  • 2 cup all-purpose flour
  • 2 tsp black pepper freshly ground
  • 1½ tsp paprika
  • ¾ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

  • 8 chicken thighs

For Crispy Roasted Potatoes

  • 2 lbs white potatoes cut into 1-inch cubes
  • 2 tbsp olive or canola oil
  • 1 tsp sea salt

Instructions
 

Chicken

  • Wash and thoroughly dry chicken pieces and place in single layer in pan.
  • Mix all the dry ingredients.
  • Sprinkle flour over chicken in pan. Toss chicken to coat well in flour.
  • Heat up the oil in a cast iron pan and place chicken pieces, skin side down in hot oil.
  • Cook for approximately 10 minutes or until skin is pale golden brown. Turn chicken over and cook for 10 minutes on second side. Turn chicken pieces once more, reduce heat to medium low, cover and cook approximately 10-15 minutes or until chicken is cooked through.
  • Remove chicken to paper towel lined plate and allow to drain for about 5 minutes.

Crispy Roasted Potatoes

  • Preheat the oven to 200°C | 400°F. Lightly spray a baking sheet or tray with cooking oil spray.
  • Arrange the potatoes on the sheet in one layer, and add the oil and salt. Toss until the potatoes are well coated and seasoned.
  • Roast in the oven for 45 minutes to 1 hour, while flipping occasionally, until crisp and golden.
  • Remove the potatoes from the oven and season with a little extra salt and pepper to taste. Sprinkle over with parsley and serve immediately

Every West African stew recipe starts with a commonĀ pepper mixĀ which consists of red bell pepper, tomatoes, onions, and scotch bonnet chilli. Some even take it further and add other types of pepper to their mix. This pepper mix is typically cooked in palm, vegetable or groundnut oil until fried.

Some also prefer it more fluidly like the consistency you get withĀ Buka stew. Ā Fish stew is a superb and fairly light meal that always comforts any time of the year. The tomato base and fantastic seasonings make it especially comforting on a chilly day. It is very adaptable because you can vary the spices in the sauce depending on taste and availability.

Is Fish Stew Healthy?

How To Make Nigerian/African Fish Stew

Prep the fish: De-scale fish and cut into steak, add to a bowl and rinse with water and lemon juice. Then transfer the fish to a colander to drain excess moisture.

Marinate the fish: add garlic granules, onion powder, ginger powder, parsley and 1 teaspoon of bouillon powder to the fish and mix to combine. Cover it with a cling film and marinate for at least 30 minutes. After 30 minutes, grill the fish for a total of 20 minutes, 10 minutes on each side.

While waiting for the fish to finish grilling or frying, blend the peppers and bring to boil on medium heat for about 10 minutes.

Cook the stew:Ā place a pan on medium heat, add vegetable oil and heat until hot. Add chopped onions and stir fry until translucent. Then carefully add the boiled pepper to the oil and bring to boil for about 10 minutes.

Season the stew with salt and bouillon powder to taste, stir to combine and continue to cook for another 10 minutes or until you can see the oil floating on top of the stew.

Add the grilled fish to the stew and carefully mix to combine. Shred fresh basil or scent leaves to the stew and cover the pan with its lid. Continue to cook on low heat for another 5 minutes. Take it off the heat and serve immediately.

Which Fish Is Best For Fish Stew?

Be sure to pick out the freshest white fish available such as cod, red snapper, tilapia, or pompano.

The other types of fish you may use or that are popularly used in African fish stew includes croaker fish, Hake fish, Mackerel know as Titus fish in Nigeria.

Can I Add Vegetables To Fish Stew?

Of course, you can! That makes it even healthier. I would add them to the stew at the same time you put in the tomato sauce. Then add the fish right before they’re tender, so they finish at the same time as the fish.

Recipe Variations

  • Chicken Stew – This recipe is just as good with chicken. The only difference is you can add the chicken much sooner because it takes longer to cook.
  • Fish Swap – You can add shrimp and any firm-fleshed fish to this recipe. Even the flakier fish will do fine if that’s what you have.

Serving and Storage

Serve – Fish stew is best hot right off the stove. Serve it in a bowl and sprinkle it with chopped parsley for elegance.

Store – The leftover stew should be cooled and stored in an airtight container. It will stay good in the fridge for up to four days or the freezer for two months.

Reheat – Thaw frozen fish stew in the fridge overnight, then gently heat it in a saucepan, occasionally stirring, until it starts to bubble.

The dish calls for duck confit, a time-honored way the French preserve duck before modern refrigeration. It traditionally also calls for a plethora of meats such as pork, sausage, lamb, salt pork, bacon, ham hocks, pork skin, and pork shoulder.

There are many regional versions of cassoulet, the best ones coming from a home kitchen. That gives you some license to improvise with ingredients you can source.

The Best Beans For Easy Cassoulet

White beans are best. There are four readily available types of canned beans to choose from for this recipe. Don’t drain and rinse the beans—add the liquid in the can into the cassoulet.

  • Navy beansĀ are small and oval-shaped and famous for their use inĀ Boston baked beans.
  • Great northern beansĀ areĀ slightly larger than navy beans. They hold their shape well when cooked and have a mild flavor. These are my favorite for cassoulet.
  • Cannellini beansĀ are the next size up from great northern beans and a little meatier than the first two.
  • ButterbeansĀ (akaĀ baby lima beans) are the largest of the four.

If you prefer toĀ cook your own dried beans, use 3 1/2 cups cooked beans with some of the cooking liquid instead of two cans of beans.

How to Make Cassoulet

Cook the bacon, onions, and garlic, and brown the bone-in, skin-on chicken thighs and Italian sausages in a skillet. Throw them into a Dutch oven with canned beans and tomatoes. Sprinkle breadcrumbs on top and pop it under the broiler for a minute or two. Walk the Dutch oven straight to the table for a beautiful presentation. It’s that easy!

Serving Suggestions

Cassoulet is rich and stewy, with a fragrant meaty broth. A simple green salad and hunks of torn baguette to dip into the broth are all you need to complete the meal.

Serve it with a light red wine such as Beaujolais or Cahors, a full-bodied rosƩ, or chilled dry white wine.

Here’s Why You Keep Gaining Weight

Have you asked yourself why you gain weight? Albeit excessively and all in the wrong places? Do you have friends or know people who can eat mountains of food on a daily basis and still remain just as they are, no extra bulge in sight? I know, that can be a bummer. If I have a cup of ice cream today, I know somewhere on my body will bulge tomorrow, the usual culprit being my stomach.

Why does that happen? Read on, let me break it down.

As your own taste buds will tell you again and again, food is not a villain. Most of us love food. And that’s a good thing because we need it for growth and repair of tissues. We need all that pent-up nutritional power to help meet our energy needs.

It’s not the food itself but the storage process that makes us unhappy. If we eat more than we need for immediate use, put bodies put it into cozy, comfortable storage cells. Where are those cells located? You already know the answer. Most of the plump cat cells are located in the trouble spots that we know about—bellies, hips, thighs, buttocks, and all the other areas that have fat holding cells.

People who tend to be overweight have bodies that scientists would describe as efficient. At first blush, efficiency might sound like a good thing, but in the modern world, it’s a liability. If your body uses food efficiently, you get the energy you need immediately, and then store the excess.

For some people, that’s fine. Their bodies almost mysteriously, don’t store much of the food they eat. You know who I’m talking about — those few people who seem to be able to eat anything and still stay thin.

For the vast majority of us, however, the fat that we store just keeps hanging around. If only there were some way to reset the controls on our bodies. If we could do that, maybe we could turn the storage function from high to low.

Of course, as you know, scientists have not quite figured out a way. Until they do, some people will be more likely to gain weight that others. The reasons have to do with body chemistry.

On the other hand, that doesn’t mean your body is going to fight you all the way. Many people can maintain a significant degree of weight loss, but that’s easiest to do when you don’t feel deprived.

Goat Gari Pinon

The short way to describe the Pinon (or Eba) as fufu made with Gari (Gali). Gari is a West African made with grated cassava and has a finer consistency than the regular couscous.

Traditionally the meat (chicken, goat, or beef) is boiled with spices (garlic, ginger, paprika…bouillon cube, salt) to tenderize it and the broth of the meat is used to cook the Gari Pinon. I use goat meat for my Pinon and serve it with some pepper, a quick tomato, and onion cooked mixture, and the fry goat meat.

What is Gari Pinon?

Gari pinon is simply the aftermath of simmering gari in a hot tomato sauce. Pork, cow, or goat meat are the most commonly used meats for preparing Pion. Pork is the most popular meat in Togo and Aflao.

Gari is a cassava food that is popular in many West African households and other parts of the world. It is made from fresh cassava tubers that have been fermented and gelatinized.

It has a creamy-white appearance and granular flour, a slightly fermented flavor, and a sour taste. Gari is widely used in most West African countries to prepare a variety of dishes. ItĀ is used to make a variety of foods in Ghana, including gari soakings, eba, gari fortor, and many others.

Gari is used in the preparation of a special dish known as Gari Pinon in Togo and Benin. What exactly is gari pinon?

Ingredients
  

For the Goat Meat

  • 1 kg goat meat
  • 1 onion
  • 1 tbsp ginger
  • 2 cloves
  • 2 allspice whole
  • 3 tbsp garlic
  • 1 bouillon cube
  • salt

For the Gari Pinon

  • ¼ cup oil
  • 2 tbsp tomato paste
  • 2 tomato puree
  • 1 bouillon cube
  • goat stock
  • gari

For the Pepper Mixture

  • 1 onion
  • 2 tbsp oil
  • 4 tomatoes
  • salt according to your taste

For the Tomato and Onion Mixture

  • ¼ cup oil
  • 1 onion
  • 10 scotch bonnet pepper
  • salt to taste

Instructions
 

Preparing the Goat Meat

  • Mix all ingredients, add water and cook for 1 hour.

  • Remove the goat meat from the stock and fry until golden. Set aside

Preparing the Gari Pinon

  • On a medium heat, in a saucepan with the goat stock.
  • Add the gari the hot broth gradually stirring vigorously until obtaining a homogeneous paste (Pinon).

Preparing the Pepper Mixture

  • On a medium heat , in a saucepan, heat the oil and add the onion.Cook for 10 mins
  • Add tomatoes, cube taste and add salt if necessary.

Preparing the Tomato and Onion Mixture

  • Heat the oil and add the crushed pepper and onion, Add salt to taste. Cook for a min orĀ Ā 2.
  • Serve the Pinon with the tomato mixture, goat meat and pepper

Egyptian Kofta

Introducing one of the more common of the world’s cuisines, kofta (meatball); a sophisticated delicacy that varies in taste and texture depending on the region.

Also known Kafta, or Kafka, it is often referred to as the Middle Eastern equivalent of a hamburger. Yes, it’s made with ground beef, ground lamb, or both, but that’s about the extent of the similarities.

It is similar to sausage but without the casing. Sure, you can make this into patties like a burger and eat it on a bun, and I suppose that would be a burger, but you usually eat it as is or in pita roll-ups.

Origin of Kofta

Recipes for this dish first appear in the earliest Arab cookbooks. The earliest recipes call for large ground lamb meatballs triple-glazed in a saffron and egg yolk mixture.

This glazing technique spread to the West, where it is known as “gilding” or “endoring.” Koftas made their way to India, where nargisi kofta were served at the Moghul court, according to Alan Davidson.

From the Indian subcontinent to Central Asia, the Middle East, the Balkans, and northern Africa, this dish can be found.

What Is The Difference Between Kebab and Kofta?

Both are meatballs made from ground lamb, veal, beef, or a combination of all three.

Kebab is sold on the street or in kebab shops, and is frequently served with pita, chopped salad, onions, and tahini sauce; kebab is typically made on skewers, whereas kofta is usually handmade. Kofta can be cooked in a curry or masala sauce on the stovetop.’

The meat is ground with mild garam masalas and vegetables before being formed into golf ball-sized meatballs and simmered to tender perfection in a saalan sauce (curry).

Ingredients
  

  • 500 g lamb
  • 1 onion diced
  • ¼ tsp dried chili flakes
  • 2 tbsp chopped fresh mint
  • 2 `tbsp chopped fresh flat-leaf parsley
  • 1 tsp paprika
  • 5 clove garlic crushed
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • ½ tsp ground coriander

Instructions
 

  • In a ziped bag , combine the mince, onion, garlic, mint, parsley, chilli flakes, paprika, ginger, cumin and coriander.
  • Use a food processor to ground the mixture of meat.
  • Shape small handfuls of the mixture into short sausages, and slide them onto metal skewers (or soaked bamboo skewers). Place them onto a lined baking tray and refrigerate covered for 20 minutes.
  • Heat an oiled barbecue plate to high. Place the koftas on the surface and reduce the heat to a low setting. Cook for 20 minutes, turning koftas occasionally, or until cooked through.
  • Transfer the cooked koftas to a tray and cover with foil. Allow to rest for 5 minutes and serve with your choice of salad, bread, and other sides.

Nothing beats the classic, traditional version of Thiakry, which is made with millet couscous. Mangoes, raisins, coconuts, or chopped almonds can be sprinkled on top.

What is Thiakry Couscous?

Thiakry couscous is well known as Degue, Chakery, or Chakri is a millet-based Senegalese delicacy. This particular recipe is a variation of the original dish.

The original plain pearled couscous can also be used. Pearled Couscous has a larger grain than regular couscous. This meal can be eaten cold as a dessert with sugar and ice.

What is Thiakry Made Of?

Millet is an important crop in Senegal, and thiakry also written thiakri, caakiri, and so on; pronounced “cha-kree” is one of its many common end products.

Thiakry is so prevalent that you can purchase it at almost any grocery store in Dakar. It is a creamy and sweet blend of yogurt, millet also known as fonio, a traditional form of millet, or plain couscous, and sugar or cinnamon. It’s popular for breakfast or as a dessert.

  • cup couscous
  • 2 tbsp sugar
  • 2 cup yogurt
  • 3 cup milk
  • 1 tsp vanilla extract and nutmeg

Instructions
 

  • Add enough warm water to the couscous to cover the grains. Let the couscous absorb the water and put in the microwave for 3 min. When the grains are cooking, let cool.
  • As soon as the couscous is cold add the yoghurt, milk, sugar, vanilla extract and the nutmeg.
  • Mix well, chill and serve cold.

The Jamaican curry goat is a blend of goat meat with Jamaican curry powder and hot spicy pepper. Typically, to make an excellent Jamaican Curry Goat, you will need the following:

  • Tomatoes and red bell pepper:Ā These vegetables add an infusion of flavor to the curry and help thicken it, so you don’t need aĀ thickener.

  • Coconut milk:Ā To make the goat curry rich and creamy.
  • Cooking oil and water:Ā All the liquid the goat meat needs to cook until it becomes tender.
  • Potato:Ā Contributes to the heartiness of the dish and thickens the stew a little bit
  • Salt and All-purpose seasoning.

How To Cook Goat Curry

If you can leave your curry goat to marinate overnight in the fridge, you will be rewarded with amazingly succulent and flavorsome results.

Where Can I Get Goat Meat From?

It might not be so easy to find goat meat, depending on where you live. Your best bet might be at your local butcher, and you can get meat from a whole goat or just part of it. Sometimes I get them from an African, Asian, or Hispanic store, but it might be a bit more expensive.

If you have access to a butcher, keep in mind that meat from an older goat is usually tougher. So if you want more tender goat meat, ask for meat from a younger female goat.

Goat meat might be challenging to cook but using an instant pot makes the process so much easier and quicker.

How Long to Cook Jamaican Curry Goat?

Even though goat meat is super tasty and sweet, you will not enjoy it if you undercook or overcook it. Therefore, be mindful of the timing. On average, the cooking time should be about one hour thirty minutes, a little more or less depending on how chunky your cut your meat.

Tips On Cooking Jamaican Curry Goat

  • If you use All-purpose seasoning, wait to do a taste test towards the end of your cooking before adding salt. This will help you correctly gauge the level of saltiness in your dish, as All-purpose already contains some salt.
  • Pat the meat completely dry before seasoning to ensure the excess moisture doesn’t wash it off.
  • For the best results, leave your meat to marinate overnight.
  • If you cannot find a scotch bonnet, you can use habanero pepper in its place.
  • Your curry goat is only as good as the type of curry you use to cook it. Be very selective when choosing your curry powder.
  • Try not to add too much liquid at once, or you will end up with a watery and flavorless curry sauce. My recipe will give an almost gravy-like texture, which is perfect.

Storing And Reheating

This instant pot goat curry keeps well for about 5 days in the fridge. You can also make a big batch and freeze it in a freezer-safe plastic bag for up to 3 months.

To defrost, leave it overnight in the fridge till it thaws. Then, warm on the stove with very little water on medium heat.

What Can I Eat This Recipe With?

  • 3 - 3½ lbs goat meat cut in chunks
  • 5 tsp garlic minced
  • 1 medium onion sliced
  • 5 tbsp curry powder
  • 1 tsp pepper
  • 4 medium peppers
  • 1 scotch bonnet pepper optional
  • 1 tbsp bouillon powder optional
  • salt to taste

Instructions
 

  • Mix all the ingredients together except for the potato and scotch bonnet pepper. Refrigerate for 24-48 hours.
  • Transfer to the one-pot and add 1 cup water and pressure cook for 30 mins.
  • Add potatoes and adjust seasoning to taste. Add the scotch bonnet pepper.Ā 
  • Slow cook for 15 or until potatoes are tender.
  • You may adjust thickness of soup with water or stock.
