This brilliant Chapati recipe is an original Indian dish that is also very popular in East Africa, particularly in Kenya and Tanzania and is used in a variety of African dishes. With this delicious flatbread, you can eat a variety of Kenyan or other African stews.
They are made from soft dough that consists of wheat flour, salt, and water. It is finer ground than most whole wheat flour sold in the United States.

Origin of Chapati

The word chapat means “slap” or “flat,” and it refers to the traditional method of forming rounds of thin dough by slapping it between wetted palms.

It’s an unleavened flatbread that’s popular in India, Nepal, Bangladesh, Pakistan, Sri Lanka, East Africa, the Arabian Peninsula, and the Caribbean.  They are made with whole-wheat flour water, oil, and salt in a mixing utensil called a parat and cooked on a Tava.

It is a popular dish in the Indian subcontinent and among Indian expatriates around the world. Immigrants from the Indian subcontinent, particularly Indian merchants, introduced chapatis to other parts of the world, particularly Central Asia, Southeast Asia, East Africa, and the Caribbean islands.

Is Chapati Good For Your Health?

Because of their high fiber content, they are a great food for your digestive health. Constipation and other digestive problems can be avoided or reduced by eating a high-fiber diet. Even if you don’t have indigestion, your body requires fiber to remain healthy.

Is Chapati Good For Weight Loss?

One or two of this dish might give you around 75-300 kcal each. This amount of calories should not bother your weight loss journey, and it should be okay for weight loss.

But if you only eat the one made with wheat then you should consider chapatis made with oats, barley, millet. These grains are way healthier than wheat.

The East African Chapati is very similar to the Indian Paratha (one of the most popular unleavened flatbreads in India). However, culture might have played its role in the slight difference in its mode of preparation compared to the Indian variety.

Chapati Side Dish

You can eat as it is, with some butter (my favorite), or with chutney or chicken biryani.

  • 3 cups white flour, plus a bit extra to dust the counter top
  • 0.5 teaspoon salt
  • 1 cup luke-warm water
  • vegetable oil

Instructions
 

  • Combine the flour, salt and 2 tablespoon oil in a large bowl. You can add 0.5 tsp of sugar if you want to sweeten it a bit.
  • Add water slowly over time and mix with your hands until well combined. If the dough is too wet or too dry, add a bit more water or flour as needed.
  • Knead for 10 minutes the dough should not stick to the bowl, otherwise add a bit more flour. Leave the dough to rest for 1hr, covered with a damp cloth.
  • Preheat a large frying pan/ skillet and brush the surface with 1 tablespoon of oil. Divide the dough into 10 equal balls.
  • Dust work surface with flour and flatten the balls slightly between the palms of your hands , then place one onto a floured board and roll into large flat and round very thin sheets.
  • Lay the rolled sheet on the griddle or pan and cook for about 30-60 seconds or until the surface is bubbling. Turn it over with tongs and cook the other side for 30 seconds or until brown spots appear. Repeat with the remaining balls flouring the board when necessary.
  • Stack the cooked chapatis on a warm plate and cover with a plate or foil to keep them warm.

Where Does Ndole Comes From?

Ndole originates from the Sawa tribe Littoral Province in Cameroon. It is one of the national dishes of Cameroon and is also popular in other parts of Africa.  Today several versions of this dish are Black Ndole with dried fish done by Cameroonian locals and Green Ndole with meat and seafood.

What Is Ndole Made Of?

It is made of a combination of peanuts, bitter leaves (substitute spinach), meat (stock fish, shrimp,) crayfish (dried shrimp) and oil. It tastes like stew spinach dip, but even better! With aromatic spices and meat. Can be prepared in so many ways with more or less vegetables and meat depending on personal taste.

How To Prepare Ndole (Cameroonian Bitter Leaf Stew)

The recipe traditionally involves cooking the bitter leaf with peanuts, onions, spices and meat to make a rich dish where the creaminess of the peanuts work well with the bitterness of the leaves.

What You Will Need To Make Ndole

A few notes about ingredients…

  • Bitter leaf : For people who live outside Africa, it may be difficult to access bitter leaf depending on where you live. If you are not able to find bitter leaf, you can substitute with kale or spinach.
  • Spinach: The Traditional recipe only use bitter leaves, hence the name. The spinach helps to counter the bitter taste of leaves; it is a personal preference and you can add it or use only bitter leaf if you prefer.
  • If using dry bitter leaves soak overnight and cook for 15 minutes using 1 teaspoon of bicarbonate soda. Rinse thoroughly and drain.
  • You can use any combination of the meat. More or less according to preference
  • Dry Crayfish can be bought in African Stores and if you are lucky you can get some at hispanic or asian markets. It is still delicious without it.

Can I Freeze Ndole?

Yes, It will last a few days in the fridge and will last some weeks in the freezer. Allow to defrost before warming in the microwave.

Is Ndole Suitable For Vegetarians?

This dish can be adapted to suit vegetarians by not adding the prawns and ground crayfish.

How Do I Clean Bitter Leaf For Ndole?

Bitter leaf is naturally very bitter. You have to wash it (rubbing the leaves together) thoroughly before cooking till most of the bitterness is gone. Using carbonated soda can also aid in this process.

  • 1.5lbs beef with bones – cut into pieces
  • 4 cups big yellow onions -finely chopped or sliced (divided) reserve 1 for garnish

  • 2 tbs Afro-Fusion All-purpose Seasoning

  • In a deep pot at a medium fire, bring your meat to Boil with 1/2 onion, afro-fusion seasoning, Maggi bouillon (cube) and salt.
  • Cook until the meat is tender. Reserve.
  • In a blender, blend to paste peanuts previously boiled with ginger,1/2 onion, habanero and leek, celery and garlic (3 cloves). Reserve this paste
  • In a new pot over medium fire, add the peanut oil, sauté 1 onion diced, meat previously boiled without the juice, and add the peanut paste mixture. Cook for 25 minutes, stirring every 5-10 minutes to prevent burning down.
  • Taste the salt and season as needed.
  • Add the crayfish (crushed dried shrimp).
  • Add the Ndole (bitter leaf) and cook 10-15 minutes until you obtain a thick paste ” Casserole”.
  • The Base of your Ndole is Done. Serve Hot

Notes on The Ingredients For Potato Pepper Soup

  1. You can use tilapia, croaker fish or cat fish.
  2. Irish Potato is informally known as spud. You may also use yam, sweet potatoes but  Irish potatoes are preferable for this meal.
  3. Mushroom is Ero/Elo/Eru (Igbo), Oru (Igala), Udib/Annang (Efik/Ibibio), Leman Kwado or Rumfar Kwado or Hular Kare (Hausa), Olu (Yoruba), Itu/Utun (Edo/Delta), Ikhowe (IsiZulu) etc.
  4. Ehu (Calabash Nutmeg) is a very traditional ingredient that is difficult to find outside Nigeria. You can add more of black pepper to make up for ehu. Ordinary nutmeg is not an alternative to this because they are not similar in any way.
  5. The 2 habanero peppers may be too much but you can adjust to your taste
  6. If you do not have scent leaves, use parsley.
  7. The bay leaves did not make any difference so you can skip it.

Why is My Potato Pepper Soup Bitter?

Your pepper soup will have a bitter taste if you use too much of the pepper soup spice blend. To rectify this simply add more water to the broth.

Storing and Reheating Potato Pepper Soup

Store this pepper soup in an air-tight container to preserve it properly. You can store potato pepper soup for a few days in the refrigerator and about 1-2 months in the freezer.

If frozen, allow the pepper soup to thaw entirely before reheating. There’s no need to add water to reheat it, just leave it on low heat for five to ten minutes.

Keep watch and turn it with a spoon so it doesn’t burn. Do not reheat in a microwave to prevent it from splashing everywhere.

  • 5 scent leaves
  • 3 bay leaves (optional)
  • Salt (to taste)

Instructions
 

Preparations Before Cooking

  • Peel the Irish Potatoes, rinse and cut into medium cubes.
  • Cut the fish head and tail into sizeable chunks.
  • Cut the habanero pepper into medium pieces.
  • Cut each mushroom into 2 parts.
  • Grind the ehu.
  • Cut the onion into into thin slices along the bulb. This is so that when they heat up, they will add body to the pepper soup.
  • Cut the scent leaves into tiny pieces.

Directions

  • Pour a small quantity of water into a clean pot and set on the stove.
  • The water should just cover the bottom of the pot. Apply medium heat.
  • Add the ground ehu, black pepper and stock cube (crushed).Stir and gently place the pieces of fish in the pot.
  • Once the bottom heats up, turn the fish around so that all sides will get some heating and become tough.
  • .When the fish is well heated all over, remove them from the pot and add the potatoes.
  • Add water to cover the potatoes, add the bay leaves and start cooking on high heat till the potatoes are cooked but not soft.
  • Add the mushrooms and cook for 2 minutes.
  • Add the fish (gently), the onions and habanero pepper and cook for 2 minutes.
  • Then take out the fish again and add salt to taste. Note: we add the fish, take it out, add, take it out etc so that it does not scatter.
  • Stir to make sure everything is incorporated.

Yes! Whether as a complete loaf or individual slices, it can be frozen. Wrap it tightly in plastic wrap and store it in a frozen Ziploc bag for up to 3 months once it has cooled.

Allow to come to room temperature on the counter top to defrost. If preferred, reheat in the oven or microwave.

  • In a separate bowl, whisk together the dry ingredients: flour, salt, baking soda, baking powder and the ground nutmeg. Add the wet ingredients to the dry ingredients and mix.
  • Bake for about 60 to 65 minutes or until a knife or toothpick is inserted into the center and it comes out clean. Baking time may vary depending on the climate or oven heat.
  • Let it stand for about 15 minutes, before removing it from the loaf pan.
  • Once it’s cool to your desire, slice and enjoy.

Mango fool is a good drink with a good flavor. It is high in calcium and protein and should be served at parties, get-togethers, and picnics. This is one of my favorite drinks, and I prepare it all the time. You can try it out and confirm the taste for yourself. This drink is created from mango pulp.

What is Mango pulp?

This is the fleshy golden, delicious inside flesh of the mango. It is easily extracted by peeling and crushing any species of mango. To extract it, crush the pieces with your hands or place them in a mixer or food processor and blend them to a pulp.

Can You Freeze Mango Fool?

When you’re through preparing it, remove it from the fire and serve it hot with cold yogurt or heavy cream and lime juice, or cool until it reaches room temperature (approximately 30 minutes) and then freeze before serving cold.

Other Ways To Enjoy Mango

Mangoes are normally safe to consume on their own, however, eating them raw might be unpleasant. Making this syrup is another approach to extracting some of the nutrients from the mango skin.

How To Cook King Crab

There are a few ways to cook a king crab legs. I prefer not to boil crab legs because they can easily become waterlogged, which reduces the flavor. My favorite methods are steaming and baking and both are so easy to do!

How to Steam King Crab Legs

  1. Add a basket to a large pot along with a few cups of water.
  2. Add the crab legs to the basket. Feel free to bend them at the joint to make them fit.
  3. Place the lid of the pot on. If the lid does not fit because of the basket, place foil over top of the pot and crimp the edges to seal and steam.
  4. Steam for about 5-7 minutes.

*Note: Crab legs always come precooked on the crabbing boat or the fishing pier upon being caught, so the goal of steaming is to rehear rather than cook through.

How to Bake King Crab Legs

  1. Lay the crab legs on a large sheet of foil. Bring up the sides of the foil and crimp them together to form a sealed package.
  2. Transfer the foil-wrapped crab legs to a sheet tray and place in the oven at 400˚F for 15 – 18 minutes.
  3. Remove from the foil package from the oven and discard the foil.

How to Serve King Crab Legs

  1. Using a pair of kitchen shears, cut the crab leg at the joint and along the leg to expose the meat.
  2. Add the cut crab legs (with the shells on) to a plate with a side of melted butter, lemon wedges and chopped fresh parsley.

Tips and Tricks for Preparing Crab Before Cooking

  • If using frozen king cab legs, there’s no need to thaw before cooking. Just increase the steaming time to 10 minutes.
  • You can cut the legs into 2 to 3-inch pieces before cooking. Use kitchen shears and snip between joints for easier cutting and eating.
  • Remember that king crab legs are sold already cooked. Be sure not to steam them too long or you can overcook them.

Originating from West Africa, this black and white speckled bird was first imported to Europe by the Portuguese in the sixteenth century. As well as being popular meat in West Africa, French and Italian chefs can’t get enough of it and are some of the biggest guinea fowl producers in Europe.

The birds are generally a little smaller than a chicken and their flavor is somewhere between chicken and pheasant, with a mild gamey flavor. It’s the perfect bird for you if you find cooking game tricky, but would like to give something new a try.

Roast or braise in a stew or curry as you would a chicken, but make sure to adjust your timings accordingly as guinea fowls are a little smaller and generally contain half the amount of fat as a chicken, meaning they can have a tendency to dry out if not cooked with care.

What To Look for When Buying Guinea Fowl

You want a bird no older than fourteen weeks – the younger the bird, the more tender it will be. Older birds should be reserved for braising to ensure the meat doesn’t dry out.

  • large guinea fowl
  • 1 tablespoon freshly squeezed orange juice
  • 2 teaspoons freshly ground black pepper
  • Dash of orange extract mixed with a dash of orange oil
  • Salt
  • 1 tablespoon freshly squeezed lemon or lime juice
  • Chicken stock, optional
  • 6 cloves garlic
  • 2-1/4 cups apple juice
  • 1 tablespoon vegetable oil
  • Orange slices, for garnish
  • Pineapple slices, for garnish

Instructions
 

  • Season the guinea fowl inside and out with the salt and garlic cloves, leaving some cloves inside the fowl and some embedded in the skin. Put the bird in a large pan.
  • Combine the fruit juices and pepper and pour the mixture over the fowl.
  • Cover and simmer gently for 1-1/2 to 2 hours, turning from time to time.
  • You may need to add more apple juice or some chicken stock to prevent burning and ensure there is enough fluid to cook the fowl fully. Preheat the oven to 450 F/240 C.
  • When the fowl is cooked, remove it from the juices and brush it all over with a mixture of the vegetable oil and the orange essence and oil.
  • Place the fowl in a roasting pan and brown it quickly in the oven.
  • When brown, remove and cool. Carve the fowl, garnish it with pineapple and orange slices and serve with a green salad.
