Sometimes called Plantain cake, is a simple dish that only requires common ingredients, takes little time to create, and consistently produces excellent results. Walnuts can be used for an extra layer of texture and crunch.
Plantain Bread Vs Banana Bread
Plantain Bread is very similar to Banana Bread, the only difference it that you are using Plantain instead of Banana and some sour cream or plain yogurt. But otherwise it taste delicious and the smell is delightful.
Banana bread also has a softer texture and retains more of the banana flavor. The plantain bread, on the other hand, is a little heavier, with a sweet but not overpowering plantain flavor.
The tastiest plantains for this dish are those that are overripe. This is when your bread’s flavor will really show through.
Is Plantain Bread Healthy?
They are rich in nutrients like potassium, beta carotene, vitamin B6, and vitamin C, and a good source of dietary fiber. They are also a slow burning resistant starch that acts as a prebiotic and feeds the good bacteria in your system.
How To Make Plantain Bread
This recipe is simple to make and requires no special skills. Before you do anything else, mash the plantains in a medium basin. Then, using butter and flour, oil and flour your loaf pan.
Second, cream together the sugar and butter. Combine the eggs, mashed plantains, vanilla essence, and sour cream or yogurt in a large mixing bowl.
Finally, combine the wet and dry components in a mixing bowl. Fill a loaf pan halfway with the batter and bake for 60 to 65 minutes.
What Kind of Plantain Do I Use For My Plantain Bread?
ONLY USE RIPE PLANTAINS! One essential requirement for making plantain bread is to use ripe plantains. Once the skin gets darker, and the plantain begins to get too soft for frying or baking, then it’s time to make plantain bread.
Letting your plantains ripen even longer until they become so soft and the skins are almost totally black will make your bread even sweeter, more flavored, and richer.
Is it Possible To Freeze This Plantain Bread?
Yes! Whether as a complete loaf or individual slices, it can be frozen. Wrap it tightly in plastic wrap and store it in a frozen Ziploc bag for up to 3 months once it has cooled.
Allow to come to room temperature on the counter top to defrost. If preferred, reheat in the oven or microwave.
How Do You Keep Plantain Bread Moist?
Wrapping plantain bread securely in plastic wrap will keep it moist for days! Allow for thorough cooling before wrapping the bread.
The wrapped loaf should then be placed in a big zip lock freezer bag or a plastic container with a tight-fitting cover. This will keep for up to 3 days on the counter and up to 6 days in the fridge.
Notes:
- Please use sour cream or plain yogurt in this recipe to create a soft and moist Plantain Bread. It will harden too quickly after baking without either of these components, and you will not enjoy it as much. I used sour cream in this recipe, and it turned out excellent, moist, and soft.
- Because baking time varies based on your region and how hot you like your bread, keep an eye on it while it bakes.

- 3/4 cup granulated sugar
- 1/2 cup butter, softened
- 1/4 cup milk
- 2 ripe plantains, mashed
- 2 eggs
- 1/3 cup sour cream or yogurt
- 1 tsp vanilla extract
- 2 cups all purpose flour (sifted)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground nutmeg

- Preheat oven to 350 degrees. Greased a loaf pan with butter and lightly dust it with some flour or use some non stick spray.
- Beat granulated sugar, butter and milk in a medium bowl, with an electric mixer on high speed and mix.
- Add the sour cream or yogurt to the creamed butter and mix. Then add the vanilla extract, mashed plantains and eggs to the mixture.
- In a separate bowl, whisk together the dry ingredients: flour, salt, baking soda, baking powder and the ground nutmeg. Add the wet ingredients to the dry ingredients and mix.
- Bake for about 60 to 65 minutes or until a knife or toothpick is inserted into the center and it comes out clean. Baking time may vary depending on the climate or oven heat.
- Let it stand for about 15 minutes, before removing it from the loaf pan.
- Once it’s cool to your desire, slice and enjoy.
Notes
- In order to get a soft and moist Plantain Bread, please use sour cream or plain yogurt in this recipe. Without either of these ingredients, it will get hard too fast after baking and you won't be liking it so much.
- For this recipe, I used sour cream and it will delicious, soft and moist.
- Baking time will vary depending on your climate and your over heat, so please be sure to watch and check on the bread while it bakes.
