Marugbo soup, a traditional Black Soup, also known as obe marugbo or obe eweta, is a dark green, almost black vegetable soup that originates from the Ondo people of southwestern Nigeria. Rich in flavor and steeped in tradition, this soup is deeply cherished by the people of Ondo state.

Marugbo Soup Ingredients

The key ingredient that gives marugbo soup its signature blackish-green color is the marugbo leaf. Marugbo is the Yoruba name for the tropical vine Clerodendrum volubile, a leafy plant that grows abundantly across western Africa. The leaves of this vine are dried and then ground into a powder before being added to the soup.

Other classic ingredients in marugbo soup include:

  • Efirin leaves (scent leaves)
  • Iteji leaves
  • Fresh peppers
  • Dried crayfish
  • Palm oil
  • Beef, goat meat or fish

Marugbo Leaf

The marugbo leaf comes from the tropical vine Clerodendrum volubile, native to Africa’s rainforests. The bitter, herbal-tasting leaves are often dried and ground to powder before being added to Nigerian soups like marugbo. Drying intensifies the leaves’ potency.

Marugbo leaves provide both culinary and medicinal value, containing compounds that offer anti-inflammatory benefits. Traditionally, the soup made from marugbo leaves is given to new mothers to aid digestion and recovery.

Marugbo Soup as Medicine

In the traditional Yoruba culture of southwestern Nigeria, marugbo soup is revered for its medicinal properties. The leaves of the marugbo vine contain antioxidant and anti-inflammatory compounds released when boiled in the soup.

Regularly eating marugbo soup is believed to aid digestion, soothe gastrointestinal issues, and relieve constipation. The high fiber content of the leaves gives the soup its intestinal cleansing effects. New mothers are often given this soup in the weeks after childbirth to restore digestive regularity.

Marugbo soup is also thought to help clear toxins from the body and quicken recovery from illnesses. Its perceived detoxifying power has earned it the nickname “hospital soup”.

Serving Suggestions

For a true Ondo style meal, marugbo soup is served with pupuru – a stiff porridge made from fermented cassava flour. The dark soup and thick white pupuru make both a delicious and visually striking pairing.

Some modern takes on this soup serve it atop rice or with eba (garri). Pounded yam is another excellent accompaniment to soak up the rich, earthy broth.

Ingredients
  

  • 1 lb goat meat, cut into cubes
  • 1 cup shredded smoked fish
  • 1 tbsp ground crayfish
  • 1 cup  dried and ground marugbo leaves
  • ½ cup dried and ground efirin leaves
  • 1 tbsp grated ginger
  • 1 small onion, chopped
  • 1  habanero pepper, seeded and chopped
  • 2 tbsp palm oil
  • water
  • salt
  • Maggi cubes

Instructions
 

  • Place the goat meat in a pot and add 4 cups of water. Bring to a boil over high heat.
  • Add smoked fish, crayfish powder, onion, habanero pepper, ginger, palm oil, Maggi cubes and salt. Stir well.
  • In a blender, combine the dried marugbo leaves, efirin leaves and 1/2 cup water. Blend into a smooth paste.
  • Add the blended leaf paste to the soup pot. Stir well to combine.
  • Simmer the soup for 15 minutes so the flavors infuse. Taste and adjust seasoning as needed.
  • Serve Marugbo Soup hot with eba, pupuru or rice. Enjoy!

  1. Dried leaves can be found at African markets or substituted with leaf powder.
  2. Adjust habanero to desired spice level.

What Is Bitter Leaf?

Bitter leaf, also known as Vernonia amygdalina, is a plant with a variety of health advantages and a strong, bitter flavor. The Igbos call bitter leaf Onugbu, the Yorubas call it Ewuro, and the Hausas name it Shuwaka.

Why Is It Called Bitter Leaf?

When you taste bitter leaf, it is just what the name implies: bitter. It is not eaten in its raw bitter form since it is unpleasant, but it is rinsed multiple times until the “bitterness” is much diminished.
However, the bitterness is never completely washed away; you can still detect undertones of bitterness when eating this soup. It takes some getting accustomed to, same to how you get acclimated to apple cider vinegar or lime.

Where Can I Get Bitter Leaf From?

Bitter leaf is very easy to come by in some African countries, such as Nigeria, and you may buy it from the market or grow it yourself. If you live in a place where bitter leaf isn’t grown, the easiest way to get it is to buy it frozen from an African store if one is nearby.

The advantage of buying bitter leaf frozen is that it has already been thoroughly rinsed, reducing bitterness and cutting prep time in half.

What Is The Best Way To Keep Washed Bitter Leaf Fresh?

Bitter leaf should be kept frozen for long-term storage. After you’ve rinsed it, press out as much water as possible and store it in a freezer container.

What is The Benefit Of Bitter Leaf Soup?

Bitter leaf is very popular in Nigeria and parts of Africa, not only because it is cheap and readily available but also because of its numerous health benefits.

African bitter leaf is used to treat malaria, help lower blood pressure, and treat gut and abdominal issues.

Taking bitter leaf soup may help soften your stool and relieve constipation. Because of extra fiber, and compounds present in the leaf. Bitter leaf has a positive in influence on blood pressure, thanks to the high level of potassium it contains.

How Do You Reduce Bitterness in Bitter Leaf Soup?

Bitter leaf is bitter by nature, thus it must be carefully cleansed before eating. Add the leaves to a big basin of water with a pinch of salt. Scrub the leaves with your hands and rinse when the water becomes frothy. Carry on like way until the water is clear.

Storing And Reheating

Bitter leaf soup stores well in the fridge for up to 5 days, and you can also freeze it for up to 3 months.
To reheat, warm it on the stove with a little water. If previously frozen, let it thaw overnight in the fridge first.

Notes On Ingredients

  • If you are outside Nigeria, you can use dried, washed, and squeezed bitter leaves to make bitter leaf soup (ofe onugbu) but you need to, first of all, make the bitter leaves soft and fresh again before adding them to the soup.
  • If you cannot buy cocoyam corms where you live, you can use cocoyam flour. An alternative to cocoyam flour is potato flour. See how to prepare the cocoyam flour or potato flour before adding it to your soup.
  • Ogiri Igbo is optional, it gives Bitter leaf Soup a traditional taste.

Ingredients
  

  • Washed and squeezed bitter leaf
  • A handful Cocoyam
  • 3 cooking spoons 3 cooking spoons Red Palm Oil
  • Assorted Beef: Includes best cut, shaki (cow tripe)Assorted Fish: Dry Fish and Stock Fish
  • Pepper, salt, and ground crayfish (to taste)
  • 3 stock cubes
  • 1 tsp Ogiri Igbo (traditional seasoning)

Instructions
 

Before Preparation

  • Make sure that the bitter leaves are well washed, such that there is no trace of bitterness left. If not, wash and squeeze it more.
  • If the bitterness cannot be completely washed off (which is usually the case with most washed bitter leaves sold in the market), boil it for about 15 minutes and wash it in cold water.
  • Wash and cook the cocoyam till soft.
  • Remove the peels and use a mortar and pestle to pound the corms into a smooth paste.

Directions

  • Boil the shaki (cow tripe), stockfish, and dry fish in 1 liter of water till they are well done. The first sign of a done shaki is that the cuts will start curling on themselves.
  • Wash the beef and add to the pot of shaki etc. and continue cooking.
  • When the meat is done, add 3 cubes of Maggi/Knorr and cook for 5 minutes.
  • Add pepper, ground crayfish, bitter leaves (if they have not been parboiled) and cook for 10 minutes.
  • Then add the cocoyam paste (in small lumps) and the palm oil.
  • Note: If the bitter leaves were parboiled to remove the bitterness, then for step 4; add pepper, ground crayfish, the cocoyam paste (in small lumps), the bitter leaves, and the palm oil. In other words, add all the ingredients at this stage.
  • Cover the pot and leave to cook on high heat till all the cocoyam lumps have dissolved.
  • Add salt to taste and the soup is ready.

Vegan Suya

Vegan Suya is a Suya that is suitable for vegetarians. In West Africa, suya is a very popular street snack. This BBQ beef skewer is popular among the Hausa people of northern Nigeria, Cameroon, Niger, Ghana, and parts of Sudan.

Suya is the Nigerian name, Kyinkyinga (pronounced chin-chin-ga) is the Ghanaian name, and Agashe is the Sudanese name. It’s usually cooked with beef, ram, or chicken.

For those abstaining from meat, suya may seem off-limits. But with some creative substitutes, plant-based eaters can also enjoy the unique flavors of this Nigerian street food favorite.

Oyster mushrooms are the perfect substitute for the meat, soaking up the spice rub and charring beautifully on the grill. When shredded into smaller pieces, the mushrooms look like shredded meat quite convincingly.

The traditional suya spice blend is incredibly flavorful, featuring a mix of warm spices like ginger and cayenne along with salty, nutty, toasted peanut powder. When tossed with the oyster mushrooms, the spice blend infuses the mushrooms with that unique suya flavor profile.

Grilling the spiced mushrooms over an open flame or in a cast iron skillet gives them that essential char, while using a grill pan recreates the grill marks that make suya so recognizable.

Tips for Perfect Vegan Suya Every Time:

  • Squeeze out excess moisture from mushrooms before grilling to prevent steaming
  • Cook mushrooms in batches for best browning and charring
  • Use a grill pan or outdoor grill for authentic grill marks
  • Use pre-made suya spice blend from an African market or online retailer
  • To make suya spice at home, use a blend of warm spices, salt, peanut powder and smoked paprika
  • Skewer mushrooms before coating to mimic meat on a stick appearance
  • Allow mushrooms to cook until nicely browned and charred
  • Serve alongside raw onion and tomato slices
  • Leftovers keep well refrigerated for several days
  • Reheat leftovers with extra spice blend to refresh flavor

Serving Suggestions

When serving vegan suya, be sure to include some raw onion and tomato slices, just as you would find accompanying traditional suya. The fresh vegetables provide a nice crunch and acidity to balance the rich, spicy mushrooms.

For a heartier meal, suya makes an excellent taco filling or addition to a grain bowl. Leftovers keep well for a few days refrigerated and can even be frozen. Simply reheat with a touch more spice blend to refresh the flavor.

Is Suya Vegan?

Traditional Suya is not vegan friendly. This popular West African street food is usually made by coating skewered meat in a spicy peanut-based sauce. Common proteins used are beef, chicken, or goat. Since it relies heavily on meat as the main ingredient, suya in its original form is not vegan. However, creative substitutions like marinated tofu or seitan can provide a vegan alternative to this meat-centric dish.

  • 2 cups Oyster Mushrooms
  • 1 tsp dried red chillies
  • ½ tsp ground ginger
  • 2 tsps finely ground roasted peanuts skip this if allergic
  • ½ tsp garlic
  • 1 tsp paprika
  • ¼ tsp salt
  • ½ tsp onion
  • 1 bouillon cube

Instructions
 

  • Wash mushroom and dry properly with a pepper towel
  • Spread out on a baking pan and put in a preheated medium.
  • Cook for about 10 minutes and set aside, turning regularly on each side as they can dry up very quickly
  • Mix chillies, paprika, garlic, ginger, onion, salt and bouillon cube in a dry bowl.
  • Transfer mushrooms in a plate and sprinkle mix to taste.

AFN: Tell us about yourself!

Freda:  I am a published author, African food scholar, writer & speaker focusing on elevating African culture through food. I lend my expertise on politics & activism panels, most recently at the Oxford Food Symposium & Pinterest.

I have been featured on Channel Africa radio, Bon Appetit Magazine, BBC, CNN, The Spruce Eats & many others. I am also a mum of 4 and have lived in various countries across the continent. With this background, I often present myself as having a Pan African Palate.

AFN: Why do you cook?

Freda: Cooking is a creative activity that frees me to wonder with my thoughts. A bonus is that I get to eat delicious food in the process. I genuinely enjoy cooking and eating. Most days, when I cook, it is entirely for my satisfaction, first and foremost.

AFN: What is your favorite memory in the kitchen?
Freda:When I tried to bake my first cake from my head without a recipe, I was about 10 years old and had no knowledge about leavening agents. So, I ended up with a beautifully decorated brick for flour and sugar.
But perhaps that’s a great thing and how we learn. I did pretty much a similar thing when I tried to cook samosas with no knowledge of how they were done and no recipe. As it turns out, I grew up believing I could neither back nor make pastries, but the opposite is true.
The year I moved to Lagos, I started baking cakes and pastries, which landed me my first business supplying restaurants with the most decadent pastries and desserts. The secret is in having recipes.
AFN: What is your biggest cooking fail?
Freda: I once had a cooking mishap that I can’t help but chuckle about now. I was attempting to impress my in-laws, and in my enthusiasm, I cooked a dish with raw cabbage. Needless to say, it didn’t turn out as planned.
My in-laws couldn’t even take a bite, and I was left utterly embarrassed. But looking back, it’s a funny story that reminds me of the importance of learning from my mistakes and not being afraid to experiment in the kitchen. We all have our moments, and that one definitely taught me a valuable lesson

AFN: What kitchen equipment do you use more and can’t do without? 
Freda: I must always have a good spatula.
AFN: What are your favorite foods to cook and why?
Freda:  Okra stew for the love of the taste, Berry galette for the artistry in such a rustic dish. Slow cooker stew like oxtail or lamb shank ragout. I just must have been a slow cooker stew in my former life, and it is the only way I believe I can cook any stewing cut of meat without fear of failure.

Freda: We truly live in the land of milk and honey in Africa. We are not poor and hopeless. I hope we believe that, not the lies, we are sold thanks to antiquated and unequal economic systems or media bias.
Our continent is rich, and we need to start to do things to serve our interests first before serving the interests of the West. It’s like putting on an oxygen mask. Anyone can make a difference today, whether by sharing cultural knowledge to empower people or small scale… or large-scale farming of indigenous foods. The future is ours for the taking.

In today’s chef spotlight, we get to hear Pam’s culinary journey, how she went from cooking to win over her in-laws to becoming a renowned chef.

AFN: Tell us about yourself!

Pam the Chef Wife: I’m Phathisiwe Khumalo, affectionately known as Pam. I hail from the quaint village of Umzimkhulu, specifically from the nurturing community of Kwa Deda. As the youngest daughter in my family, I grew up surrounded by warmth and love.

Early in life, after entering into marriage, I embarked on a culinary journey to win the hearts of my in-laws, igniting a deep passion for the art of cooking. Driven by this newfound love, I decided to pursue formal culinary education.

I enrolled at Capsicum Culinary School, where I dedicated myself to mastering the culinary arts. In 2021, I proudly earned my diploma (QCTO), marking my official qualification as a chef. Today, I am a skilled and passionate chef, blending tradition with innovation and creating flavors that tell stories.

AFN: Why do you cook?

Pam the Chef Wife: I find immense joy in cooking because, for me, it’s not just a chore, but a therapeutic experience. It’s a unique form of self-expression where I can communicate my emotions and creativity through food.

Each dish I create is a canvas, allowing me to blend flavors and textures, much like painting a masterpiece. Cooking is my way of speaking to the world, and the kitchen is my sanctuary where I find peace and fulfillment.

Pam the Chef Wife: The times I spent with my mum, aunt, and grandma in the kitchen. Priceless, but those shaped and molded my love for cooking, creating, and remodifying recipes. Saturday dinners as a teen meant I got to experiment with ‘newfound’ ingredients. There was so much joy and intrigue in these moments.
