Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 2 tsp ground cumin
  • 1 tsp paprika
  • ¼ tsp cayenne pepper
  • 4 cups vegetable or chicken broth
  • 1 can diced tomatoes
  • 1 bunch kale/spinach, stems removed and leaves chopped
  • 1 can chickpeas, rinsed and drained
  • ½ cup creamy peanut butter
  • Salt and pepper to taste
  • Chopped cilantro, peanuts, and lime wedges for garnish

Instructions
 

  • Heat oil in a pot and sauté aromatics like onion, garlic and ginger
    2 tbsp olive oil, 1 medium yellow onion, diced, 1 tbsp grated fresh ginger, 3 cloves garlic, minced
  • Add spices and dried chilies and cook briefly
    1 tsp paprika, ¼ tsp cayenne pepper
  • Stir in vegetables, stock and tomatoes
    1 can diced tomatoes
  • Simmer until vegetables are tender
    1 bunch kale/spinach, stems removed and leaves chopped
  • Add peanut butter and protein of choice
    ½ cup creamy peanut butter
  • Adjust seasoning with salt, pepper, hot sauce
    2 tsp ground cumin, Salt and pepper to taste
  • Finish with lime juice and chopped cilantro
    Chopped cilantro, peanuts, and lime wedges for garnish
