Moringa (zogale) has come to stay although it has been around in the northern part of Nigeria for decades. Growing up, I have eaten different meals of zogale. My grandmother made “kwadon zogale”, “miyar zogale”, “dambun zogale”. Each of those zogale meals were delicious. Recently, from the 1990s, moringa recipes are now everywhere, in Nigeria and globally.This is following in-depth scientific research on its many nutritional benefits and the mass awareness of its use. Moringa is highly nutritious and has many medical benefits. A 100g of moringa leaves is high in Magnesium and protein. It is also a good source of calories (64 per 100g). Research has shown that it has many medical benefits, including: anti-diabetic, anti-oxidant, anti-hypertensive, mood stabilizing effects, protecting vital body organs (liver, kidney, heart, testes etc), lowering blood cholesterol level and so on.   • 150g Macaroni
  • 100g Beef liver
  • 2 Carrot
  • 1 Red bell pepper
  • 1 Onions
  • Lime
  • Seasoning
  • Water


  1. Add water to macaroni in a pot and parboil for 5 minutes. Wash and drain and pour back into pot. Again, add water just above the macaroni level. Add a pinch of salt. Cover pot half-way. Macaroni foams a lot of bubbles while cooking . Covering pot half-way allows the bubbles to escape. Cook for 10 minutes. Drain in a colander.
  2. Wash and drain liver. Cut in small cubes. Add seasoning cube, onion, ground pepper, pinch of salt. Stir-fry in a sauce pan until brown and soft for 5 minutes. Do not deep-fry. This will make the liver hard and lose its nutritious value.
  3. Hand-pick moringa leaves from its stems (stem is hard and cooks longer than the leaves, making the leaves over-cooked). Pour leaves in a bowl and add hot water to cover leaves. Allow leaves to settle for 5 minutes. The hot water makes any sand or dirt to settle at the bottom of the bowl and makes the leave softer and edible .
    Drain hot water and wash leaves thorough in cold water, making sure all sand and debris is removed. Drain excess water in colander.
  4. Add macaroni and moringa leaves in a bowl. Wash and cut carrots, bell pepper, onion and cucumber. Add all ingredients to the bowl. Add the liver. Toss all ingredients to get a good mix. Add lime (optional).
