Dakhine is a nourishing dish that the Senegalese simply live. Not only that, it is quite a cheap dish to prepare as it contains simply rice, oil, and vegetables.
What is Dakhine?
Dakhine is also called dakhine mbeup or dahine. It is a traditional Senegalese dish made with meat, peanut paste, and rice.
The whole is cooked with a lot of water then the cooked rice is added. The rice used is usually the “Tyson” and is cooked “al dente”.
In Senegal, it is reserved for the evening meal, but for some, it is a little too spicy for an evening meal.
Dakhine Recipe
To start, you put the rice in a bowl of water and let stand.
Wash and cut the meat into small pieces. Add pepper, salt, chili, vinegar, and minced garlic. To mix.
Heat the oil in a pot. Add the meat. Leave to brown for 10 mins. Add chopped onion. Mix and let brown for 3 minutes.
Put the concentrated tomato in a bowl. Add half a glass of water. Mix well. Add to cooking meat. Mix and cook for 7 minutes. The color should turn very dark red.
Add 1.5 L of water. Add the stock cubes, a pinch of salt, chili, and pepper. Mix well. Add peanut paste. Cook for 40 minutes over medium heat.
Add the drained rice. Stir and adjust the seasoning to your taste (salt, pepper, chili).
Let cook for 15 minutes over medium heat. Mix, then cook for 10 minutes over very low heat.
If there is too much sauce left, you can cook for a few more minutes. But the rice should not be dry. Food is ready.
Serve on a plate and enjoy hot. Enjoy your lunch!
