Creamy Samp is a loved South African dish made from dried corn kernels. This is eaten in the place of rice and mealie-meal. Creamy Samp

Creamy Samp is a beloved South African dish made from crushed maize kernels, cooked to a smooth, porridge-like consistency, often served with beans in some parts of the region.

Ingredients
  

  • 2 cups  quick cook Samp
  • 3 cups boiling water
  • Cooking oil
  • 1 large onion (chopped)
  • 1 cup mushroom (chopped)
  • 1 tablespoon aromat
  • ½ cup mozzarella cheese (grated)
  • 4 tablespoon cream of Mushroom soup pack
  • 1 cup milk
  • Salt and pepper to taste

Instructions
 

  • In a large deep pot, add two cups of quick cook Samp. Cover with the boiling water and allow to cook over medium heat for 50 minutes.

  • In a separate pan, add some cooking oil and allow to heat up before adding your onion.

  • Fry the onion until translucent, add the mushrooms, and fry until brown.

  • Add the mushroom mixture and mix well once the Samp is soft and all the water has cooked away.

  • Add a tablespoon of aromat.

  • In a clean bowl, add the mushroom soup pack to the milk, mix well, and then pour into the Samp, followed by the cheese.
    1 cup milk, ½ cup mozzarella cheese (grated)
  • Allow the mixture to simmer for 5 minutes; add salt and pepper to taste if necessary.

  • Serve hot with any protein of your choice.
