Waiting for a cook
Kenya · Central Kenya (Kikuyu)
Mukimo is the green mash of central Kenya: potatoes boiled and pounded with maize, green peas or beans and pumpkin leaves, which give it its colour. It is the Kikuyu dish for weddings, family gatherings and funerals, and in Nairobi it is the standard partner to nyama choma and beef stew. The Nairobi restaurant version is often called irio. Good mukimo is bright green, soft and full of vegetables.
