Waiting for a cook
Tunisia
Zouza (also jouza, "the walnut") are little biscuits shaped like walnut shells, baked in a hinged iron mould over the flame, then filled with caramel made by boiling a tin of sweetened condensed milk and pressed together in pairs. The shell is a plain butter biscuit dough; the surprise is the soft caramel inside, sometimes with a hazelnut hidden in the middle. They are made by the hundred for Eid, weddings and Ramadan evenings, and every Tunisian household with a zouza mould has its own dough proportions.
The draft was written from 3 published sources and holds 9 ingredients and 8 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
