Waiting for a cook
Malawi
Zitumbuwa are Malawi's banana fritters, and what makes them Malawian is the flour: mgaiwa, whole maize meal, rather than wheat. Very ripe bananas are mashed into a thick batter with maize meal, a little sugar or salt, sometimes egg and milk, then shaped by hand into flat rounds and deep-fried golden. They are sold at roadsides and markets and made at home for tea; the maize gives a coarser, sweeter crumb than the wheat-flour fritters of West Africa.
The draft was written from 3 published sources and holds 7 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
