Waiting for a cook
Guinea · Basse Guinée (the coast and Conakry)
Yétissé is a coastal Guinean stew of fish (or beef) with cassava, carrot and aubergine in a red palm-oil and tomato sauce, sharpened with a paste of pounded aubergine, ginger and garlic, and served with rice that has boiled okra mashed through it. The okra rice is what marks it out from other West African fish stews. It is a dish for the whole table: rice around the edge of one big platter, sauce and fish in the middle, everyone with a spoon.
The draft was written from 3 published sources and holds 19 ingredients and 8 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
