Waiting for a cook
Sierra Leone
Yebeh is a Mende farm stew from the south and east of Sierra Leone: chunks of boiled cassava and sweet potato or yam, folded into a thick sauce of fried onion, ginger, garlic, tomato and chilli, coloured with turmeric, and often enriched with a spoon of groundnut paste and a handful of greens. It is made with chicken, fish or nothing at all, and eaten with rice or on its own. Like most Sierra Leonean stews it is better the next day.
The draft was written from 2 published sources and holds 15 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
