Waiting for a cook
Morocco · Atlas and the Amazigh south
The Berber tagine is the tagine of the Atlas villages and the roadside cafés between them: pieces of lamb (or chicken or beef) spiced with turmeric, ginger, paprika and ras el hanout, with potatoes, carrots, courgettes, peppers and tomatoes arranged in a tall dome over the meat, and green olives on top, all cooked slowly in the clay pot until the vegetables are soft and the juices thick. It is a whole meal in one dish, served straight from the tagine with bread to scoop.
The draft was written from 2 published sources and holds 12 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
