Waiting for a cook
Cameroon
Soya is Cameroon's evening street meat: thin slices of beef rubbed with a marinade of garlic, ginger, white pepper, cayenne, Maggi and oil (in the north and in Hausa hands, a dry rub of ground roasted groundnuts and pepper), threaded on sticks and grilled over charcoal at the roadside from dusk. It is eaten off the stick with raw onion, a little pepper sauce, and roasted half-ripe plantain or a piece of baguette. Nigeria's suya is the same tradition under a different spelling; the Cameroonian version leans on fresh garlic and ginger.
The draft was written from 2 published sources and holds 11 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
