Waiting for a cook
Sudan
Aswad means black, and salatet aswad is the Sudanese "black salad": fried aubergine mashed into a tomato sauce and finished with peanut butter, lime, garlic and a little chilli. It is somewhere between a salad and a dip, eaten cold or at room temperature with kisra or bread, and it sits on the table at almost every Sudanese meal, from Khartoum to Juba. Peanut is what makes it Sudanese; without it, it would be an Egyptian aubergine salad.
The draft was written from 3 published sources and holds 13 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
