Waiting for a cook
Tunisia · Djerba and the south-east
Rouz jerbi is the green rice of the island of Djerba: raw rice mixed with chopped spinach or chard, parsley, peas, carrots, chickpeas and small pieces of lamb or chicken (often with liver), coated in olive oil, tomato and spices, and steamed in the top of a couscoussier until everything cooks together. It comes out fluffy, herby and red-flecked, and it is eaten as a complete meal, usually with fried green chillies on top. The whole country now cooks it, but the method is Djerba's.
The draft was written from 2 published sources and holds 16 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
