Waiting for a cook
Algeria · The east (Constantine, Annaba, Guelma, Batna)
Rfiss is the sweet semolina dish of eastern Algeria, made for weddings, births, Ramadan evenings and any big family reception. A rich semolina galette (mbessa) is baked, broken into crumbs, steamed like couscous with milk and orange-blossom or rose water, then worked with butter, honey and sugar until it is soft and fragrant. It is served in a dome, dusted with icing sugar and decorated with walnuts, almonds and sugared almonds. Constantine claims the finest version.
The draft was written from 3 published sources and holds 7 ingredients and 8 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
