Waiting for a cook
Gabon
Poulet nyembwe is Gabon's national dish: smoked chicken cooked in nyembwe, the thick red pulp pressed from boiled palm nuts, with onion, garlic and chilli. Nyembwe means palm oil in Myene. The sauce is the same family as Congo's moambe and Nigeria's banga, but the Gabonese version is plain and smoky: smoked chicken, palm pulp, onion, garlic, sometimes bay leaf, and in some homes sorrel leaves, okra and crayfish powder. Eaten with white rice, fried plantain, steamed plantain, cassava or pounded yam.
The draft was written from 4 published sources and holds 9 ingredients and 6 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
