Waiting for a cook
Nigeria · Rivers State (Ijaw and Kalabari)
Onunu is the Ijaw and Kalabari wedding dish of Rivers State: yam and very ripe plantain boiled together, pounded into one smooth yellow mass with red palm oil, and moulded into balls. Unlike other swallows you chew it, not swallow it, and it is served with a light, spicy fresh-fish stew, or with fisherman soup, native soup or pepper soup. A mortar and pestle is traditional; a food processor does the job today.
The draft was written from 2 published sources and holds 6 ingredients and 6 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
