Waiting for a cook
Kenya
Omena are the tiny silver fish of Lake Victoria, sun-dried on the shore and sold by the tin all over Kenya (dagaa in Tanzania, "Kisumu boys" as a Nairobi joke). Cooking them well is a skill: the dried fish are picked over, soaked in hot water with vinegar or lemon to take away the sand and the strong smell, briefly fried, then simmered in a thick tomato, onion, garlic and ginger sauce with chilli and finished with lemon juice and coriander. Eaten with ugali, they are the cheapest protein in the country and a taste people either love or come to love.
The draft was written from 2 published sources and holds 11 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
