Waiting for a cook
Nigeria · Abia and Imo States
Ofe achara is the egusi soup of Abia and Imo States built around two things you will not find in ordinary egusi: achara, the tender inner shoot of elephant grass, broken into short pieces, and mgbam (mkpurusu, akpuruakpu), seasoned egusi moulded into firm balls that hold their shape and are chewed like meat. The balls are bound with osu, a wild plant, or with achi. Okazi leaf, stockfish, dry fish and ogiri okpei finish it, and it is eaten with akpu (cassava fufu).
The draft was written from 3 published sources and holds 11 ingredients and 9 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
