Waiting for a cook
Malawi
Nthochi is the Chichewa word for banana, and nthochi bread is Malawi's banana loaf: ripe bananas beaten into a plain batter of flour, sugar, butter or margarine, egg and milk, baked slowly in a loaf tin and sliced for tea. It is a tea-room and mission-kitchen bake that became a Malawian standard, made with the small sweet lakeshore bananas, and it turns up in Peace Corps and church cookbooks as the Malawi recipe. Some cooks add nutmeg, coriander or vanilla; most do not.
The draft was written from 3 published sources and holds 9 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
