Waiting for a cook
Kenya · Coast (Malindi, Mombasa)
Muhogo wa rojo, "cassava in sauce", is Swahili coast street food: chunks of boiled cassava simmered in a thin, sharp, spicy sauce and eaten from a bowl with a spoon, with tamarind chutney (ukwaju) drizzled on top and sometimes crisps or crushed cassava chips over that. It is best known from Malindi and is sold along the whole Kenyan coast. There are two family lines: a yellow sauce thickened with a little flour and turmeric and soured with raw mango and lemon, and a red tomato sauce with chilli and garlic. Some cooks add beef and call it muhogo wa rojo na nyama.
