Waiting for a cook
Zimbabwe
Mufushwa is the Shona word for vegetables dried in the sun for the dry season: cowpea leaves (munyemba), pumpkin leaves, blackjack, rape, okra. The classic relish is mufushwa wemunyemba une dovi, dried cowpea leaves boiled back to softness and finished with fried onion, grated tomato and a spoonful of peanut butter (dovi), which turns the slightly bitter greens smooth and nutty. It is eaten with sadza, the everyday relish of rural Zimbabwe and a nostalgic one in town.
The draft was written from 2 published sources and holds 8 ingredients and 6 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
