Waiting for a cook
Egypt
Molokhia is the green soup of Egypt: the leaves of jute mallow, chopped almost to a paste, cooked briefly in chicken (or rabbit) broth and finished with the ta'leya, a sizzle of garlic and ground coriander fried in ghee. It is thick, glossy and a little slippery, poured over rice with the chicken alongside, or drunk with bread. It is one of the oldest dishes in the country, eaten in every home from Alexandria to Aswan, and the sound of the garlic hitting the pot is said to announce it.
The draft was written from 3 published sources and holds 11 ingredients and 8 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
