Waiting for a cook
Comoros
Mkatra siniya is the Comorian "white cake": a dense, moist cake made from soaked rice ground with fresh coconut and coconut milk, sweetened and scented with cardamom and vanilla, and baked in a tray. There is no wheat flour in it at all. It comes out for weddings, baptisms, Eid and any large family feast, and it is eaten in squares with tea. Siniya means tray in Swahili, which is how the cake gets its name; on the Kenyan coast the same bake is called mkate wa sinia.
The draft was written from 2 published sources and holds 10 ingredients and 9 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
