Waiting for a cook
Mauritania
Maru we-llham means "rice and meat" in Hassaniya Arabic, and it is the one-pot dish of the Mauritanian table: meat, chicken or lamb, browned with onion and a spoon of mustard, simmered with cabbage, carrot and aubergine, and finished with rice cooked in the same broth. The vegetables are lifted out and laid back on top of the rice to serve. Everyone eats from the one dish. It is plain by design, the way Moorish cooking likes it.
The draft was written from 3 published sources and holds 12 ingredients and 6 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
