Waiting for a cook
Zimbabwe
Maputi neNzungu is the fireside snack of rural Zimbabwe: dried maize kernels roasted in a heavy pan (a mugango) over the fire until they brown and some of them pop, with shelled groundnuts thrown in for the last minutes so they char at the edges, and a little salt water splashed in to season. It is chewy, smoky and filling, the thing people crunched around the fire on winter evenings, and the shop version, puffed maputi in a packet, is now a Harare bus-stop snack. Salted roasted peanuts on their own are mutetenherwa.
The draft was written from 2 published sources and holds 4 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
