Waiting for a cook
Lesotho
Likhobe is a slow-cooked pot of whole sorghum grain, dried beans and often cracked wheat, simmered for two hours until everything is soft and the pot is thick like a porridge. It is a mountain dish, made from what stores well through a Lesotho winter, and it is eaten on its own with a little fat and salt, or beside greens and meat. The Basotho chef Ska Moteane has done more than anyone to put it on paper.
The draft was written from 4 published sources and holds 8 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
