Waiting for a cook
Republic of the Congo · the Congo basin, both Congos
Liboke means "packet" in Lingala, and liboke ya mbisi is fish, usually capitaine (Nile perch), catfish or tilapia, rubbed with onion, garlic, tomato, chilli and herbs, wrapped tight in banana leaves and cooked over coals, in the oven or in boiling water until the leaf has steamed everything together. It is the river dish of both Congos, sold from riverside ngandas in Kinshasa and Brazzaville, and eaten with chikwangue, rice or plantain. The Central African Republic makes the same packet and calls it maboké.
The draft was written from 4 published sources and holds 15 ingredients and 6 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
