Waiting for a cook
Democratic Republic of the Congo
Liboke (plural maboke) is Lingala for a parcel, and liboke ya malangwa is the Congo River's fish parcel: catfish or another firm river fish rubbed with a stock cube and marinated in garlic, ginger, spring onion, tomato, nutmeg and hot pepper, then wrapped in banana leaves with a bay leaf and cooked in the oven, over coals or steamed, so the fish cooks in its own juices and takes the perfume of the leaf. It is the dish of the Kinshasa riverside restaurants and of every fishing village on the river, eaten with rice, fried plantain, fufu or chikwangue. Brazzaville makes it the same way as liboke ya mbisi.
The draft was written from 2 published sources and holds 11 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
