Waiting for a cook
Madagascar
Lasary is the Malagasy word for the sharp little salads and pickles that sit beside rice and a laoka at every meal. There are three main kinds. Lasary voatabia is a raw salad of diced tomato, red onion, spring onion, ginger and lemon. Lasary karaoty (or lasary legioma) is blanched carrot, cabbage and green beans turned in oil with onion and turmeric and finished with lemon, the highland version. Lasary citron is a cooked lemon pickle with ginger, chilli, turmeric and curry, kept in a jar. In towns lasary also fills a baguette for a cheap lunch.
The draft was written from 5 published sources and holds 17 ingredients and 12 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
