Waiting for a cook
Guinea
Lafidi (fouti in some regions, maraoulagni in Malinké country) is the Guinean breakfast and family dish of local brown "country rice" served under a thick green sauce of boiled and pounded vegetables: okra, African bitter eggplant (diakatou), green bissap or sorrel leaves and chilli, seasoned with soumbara (fermented locust bean), dried shrimp powder and a spoon of red palm oil, with fried onion on top. It is cheap, quick and eaten with the hand, and every Guinean has a grandmother's version. A richer town version blends smoked fish, tomato and onion into the sauce.
The draft was written from 3 published sources and holds 12 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
