Waiting for a cook
Ghana
Kpakpo shito is the green, fresh-tasting cousin of Ghana's dark, fried shito, named for the kpakpo chilli (the small, fragrant petite belle pepper) it is made from. The chillies are blended with onion, garlic, ginger and a little green bell pepper, then either eaten raw, salted and oiled, or simmered briefly in oil until the raw edge goes and the oil rises. It is the sauce for kenkey and fried fish, banku and tilapia, grilled chicken, and it is fierce: the bell pepper or a green tomato is there to take the heat down. Fafa keeps hers fresh and green; Biscuits and Ladles cooks hers with rosemary, coriander seed and spring onion.
The draft was written from 2 published sources and holds 9 ingredients and 4 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
