Waiting for a cook
Uganda
Kabalagala are Uganda's "pancakes", though they are nothing like a Western pancake: a stiff dough of very ripe small sweet bananas (the kabalagala or ndiizi type) kneaded with cassava flour, rolled out, cut into rounds with a cup and deep-fried until golden and chewy. They are sold from baskets at bus parks and school gates and made at home for tea; the cassava gives them a slight stretch and the bananas all the sweetness. Only rounds, please: Ugandan cooks say the ancestors will not forgive star-shaped kabalagala.
The draft was written from 2 published sources and holds 5 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
