Waiting for a cook
Zambia · Northern Province (Bemba), now nationwide
Ifinkubala (ifishimu in Bemba, vinkubala in Nyanja) are the dried mopane caterpillars that came to the rest of Zambia from the Bemba north and are now a relish in every province. They are harvested twice a year, mainly from November to January, squeezed, parboiled and sun-dried, and sold in the markets by the tin. The Zambian way is quick: a short soak in hot water, then fried in oil until crunchy, with onion and tomato added at the end, and served as a relish with nshima. They are also eaten dry-fried as a snack with a drink.
The draft was written from 2 published sources and holds 5 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
