Waiting for a cook
Tunisia
Harissa hloua, "sweet harissa", has nothing to do with the chilli paste; it shares only the name, from the Arabic word for something crushed or ground. It is Tunisia's semolina and almond cake: a moist, dense bake of fine semolina, ground almonds, eggs and orange, cut into diamonds and soaked in orange-and-lemon syrup, each piece topped with crushed pistachios or almonds. It sits on the sweets tray at Eid and weddings and is sold by the square in every pastry shop. The same cake appears across the Maghreb and the Middle East under other names (basbousa, namoura), but the almond-rich Tunisian version is its own thing.
The draft was written from 2 published sources and holds 12 ingredients and 8 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
