Waiting for a cook
Eritrea
Ga'at is a stiff porridge of toasted barley or wheat flour, shaped into a mound in the bowl with a well pressed into the top. The well is filled with melted spiced butter (tesmi or niter kibbeh) and berbere, and yoghurt or sour milk is poured round the outside. You eat it by hand, breaking off a piece of the porridge, dipping it in the butter and then in the yoghurt. It is a breakfast and a dish for new mothers across the Eritrean and Ethiopian highlands; in Amharic it is genfo.
The draft was written from 4 published sources and holds 6 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
