Waiting for a cook
Nigeria · Lagos
Frejon is the Good Friday dish of Lagos: black beans (ewa ibeji) boiled soft, blended smooth with coconut milk and cooked down to a thick, lightly sweet pudding, then eaten with fish stew, peppered snail and a sprinkle of garri Ijebu. It came to Lagos with the Aguda, the freed Afro-Brazilians who settled in the Brazilian Quarter in the 1800s and kept the Portuguese-Catholic custom of a meatless Friday. The name is from the Portuguese feijão, beans. Outside Holy Week you will rarely see it.
The draft was written from 3 published sources and holds 6 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
