Waiting for a cook
The Gambia
Ebbeh is The Gambia's favourite street soup: cassava boiled soft and partly mashed into its own broth, coloured with a little palm oil, sharpened with tamarind and lime, and loaded with smoked bonga fish, catfish and whatever seafood the cook has (cockles, prawns, crab), with scotch bonnet for heat. It is thick, sour, hot and eaten from a bowl in the afternoon, often from a roadside vendor, and families cook a big pot in the days before Ramadan.
The draft was written from 2 published sources and holds 13 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
